BROWNIES - will this work?👶🏼🤣 Recipe ⬇️ - 200g dark chocolate (70% cocoa) - 150g unsalted butter (cut into cubes) - 125g mixed sugars (combine icing sugar, caster sugar, or light brown sugar to total 125g) - 125g dark brown sugar (adds extra richness) - 3 large eggs - 1 tsp vanilla extract - 85g plain flour - 15g cornflour (cornstarch) - 30g cocoa powder (unsweetened) - 1/4 tsp salt - Optional: 200g dark chocolate & white chocolate chunks Instructions: 1. Preheat the oven to 180°C (160°C fan)/350°F. Line a 20cm square baking tin with parchment paper. 2. Melt the chocolate and butter: In a heatproof bowl, melt the dark chocolate and butter together over a pan of simmering water. Stir occasionally until smooth. Remove from heat and let it cool slightly. 3. Whisk the sugars and eggs: In a separate bowl, whisk together your mixed sugars (icing, caster, or light brown) with the dark brown sugar and eggs until fluffy and well combined. Add the vanilla extract and whisk again. 4. Combine chocolate mixture: Slowly pour the melted chocolate and butter mixture into the egg and sugar mixture, folding gently until fully incorporated. 5. Sift the dry ingredients: Sift the plain flour, cornflour, cocoa powder, and salt together. Gradually fold these into the chocolate mixture until just combined. 6. Optional: Add chocolate chips: Fold in the dark chocolate chips if using. (Top with more if you fancy) 7. Bake: Pour the batter into the prepared tin, smooth out the top, and bake for 20-25 minutes until the top is slightly cracked and a toothpick comes out with moist crumbs. 8. Cool: Let the brownies cool in the tin for at least 30 minutes before slicing. Cornflour will soften the brownie by reducing the gluten formation and thickens without drying! Pre-baby cookies 🍪👶🏼🔥 Ingredients: - 150g unsalted butter (cold, cut into cubes) - 75g granulated sugar - 75g light brown sugar - 1 large egg - 1 tsp vanilla extract - 225g plain flour - 1/2 tsp baking powder - 1/4 tsp baking soda - 1/4 tsp salt - 200g dark chocolate chunks (I used a mix) - Optional: 1 tsp of miso paste or coffee grounds - Optional: chopped nuts (e.g., pecans or walnuts) Method: 1. Preheat oven to 200°C (400°F) and line a baking sheet with parchment paper. 2. In a large bowl, beat the cold butter cubes with the granulated sugar and light brown sugar until just combined (still chunky). 3. Add the egg and vanilla extract, and mix until just incorporated. (And miso paste / coffee if using) 4. In a separate bowl, whisk together the flour, baking powder, baking soda, and salt. 5. Gradually add the dry ingredients to the butter mixture and mix until just combined. The dough will be quite thick. 6. Fold in the chocolate chunks and optional nuts. 7. Scoop large balls of dough (about 110g each) and place them onto the prepared baking sheet. Leave the dough mounds tall to create the thick, chunky texture. 8. Bake for 12-15 minutes, or until golden brown around the edges but still soft in the center. 9. Allow the cookies to cool on the baking sheet for 10 minutes before transferring to a wire rack to cool completely. Breakfast Waffles 🧇 (5-day from scratch crash course is LIVE on saltysaltyflavours.com) Ingredients 100 g whole wheat flour (or spelt flour) 1 tsp baking powder 1/4 tsp baking soda 1/8 tsp salt 1/2 tbsp coconut sugar or maple syrup 1 large egg 120 ml milk 1/2 tsp vanilla extract 30 ml melted coconut oil or olive oil 60 g Greek yogurt Instructions: 1. Preheat the waffle iron: Set your waffle iron to medium-high heat and lightly grease it if needed. 2. Mix dry ingredients: In a large bowl, whisk together the whole wheat flour, baking powder, baking soda, and salt. 3. Mix wet ingredients: In a separate bowl, whisk the egg, almond milk, vanilla extract, coconut oil (or olive oil), and coconut sugar (or maple syrup) until well combined. Then, stir in the Greek yogurt until smooth 4. Combine: Slowly add the wet ingredients to the dry ingredients and stir until just combined. Jerk Chicken, Plantain & Veggies 🔥 Pretty clear that im not Jamaican (obviously having a joke calm down lol) but i do love jerk flavours very much! Obviously this isnt truly authentic but its nice and simple to execute!!! Ingredients: - 1 tablespoon ground allspice - 1 tablespoon brown sugar or coconut sugar - 1 tablespoon garlic powder (or 2 fresh cloves, minced) - 1 tablespoon onion powder - 1 teaspoon ground thyme (or 1 tablespoon fresh thyme, finely chopped) - 1 teaspoon ground cinnamon - 1 teaspoon ground nutmeg - 1 teaspoon ground ginger - 1 teaspoon smoked paprika (for a smokey kick) - 1 teaspoon black pepper - 1 teaspoon salt - 1 teaspoon cayenne pepper (adjust for heat preference) - 1 fresh Scotch bonnet pepper (finely chopped, optional for extra heat) - Juice of 1 lime - 2 tablespoons soy sauce (or coconut aminos for a gluten-free option) - 1 tablespoon olive oil - 2 plantains - 2 chicken breast/thighs - mixed veggies 1. Marinade your chicken for as long as you can in all of the spices & then get them into a hot pan - either cook through or add to the oven until internal temperature reaches 65-73 degrees C 2. Slice your plantain diagonally and shallow or deep fry until golden brown (will take 2-3 mins each side) 3. Dice your veggies and fry these off with some salt and pepper to keep it simple 4. Then as a bonus, add some butter or stock or even just water to your pan with meat in and get all thise flavours up and pour all over your meal and ENJOY!! #jerkchicken #plantain #simpledinner #healthydinner

I may have skipped leg day but that doesn’t make me receiving the @Great Run finisher medal any less valid. Self propelling a wheelchair takes a lot of upper body strength and is something I was once told would never be possible due to my left hand/wrist deformity. That 13.1 miles was one of the hardest things I’ve put my body through and I am proud of what I accomplished.
