BEEF BRAISED SHORT RIBS Im gonna make these more often because I prefer beef braised short ribs this way more than the way Korean people make them (galbi jjim) Recipe is from @Cook like a PROkuda 4 lbs short ribs Salt and pepper to taste 1 large onion, chopped 3-4 carrots, chopped 2 celery stalks, chopped 4 cloves of garlic 2 TBSP tomato paste 2 cups red wine 2 cups beef brother 2-3 sprigs of thyme 2 bay leaves Oil, for cooking 1. Generously season beef short ribs with salt and black pepper. Then sear in some oil and set aside. 2. In the same pot, cook onions, celery, carrots and garlic. Cook for ~5 minutes. 3. Add 2 TBSP tomatoe paste and cook for 2 minutes 4. Add 2 cups red wine and cook til slightly reduces 5. Add 2 cups beef broth 2-3 sprigs of thyme, and 2 bay leaves. Combine well then turn off hear. 6. Add short ribs back in and bake at 360F for 2 - 2.5 hours 7. After baking, carefully remove short rib. Then pour the remaining liquid (which should be the veggies, beef broth, red wine, bay leaves, etc) through a strainer. Discard the solids and reserve the liquids 8. Bring the liquid over a simmer and allowed the liquid to reduce. 9. Serve ur ribs over potatoes and drizzle it with your sauce

Once upon a time, a broke backpacker with a lot of dreams landed in Bali. One of those dreams was the Lost Villa When I arrived in Bali in 2015, I immediately fell in love with this island. It felt like everything I ever wanted from a home. It was sunny, tropical, adventurous, had amazing people who actually LIVED but also had a mission in life. And it was wildly affordable compared to life in Vancouver. But my time on the island was limited. I had a corporate job to fly home to in Canada and after several months of travel, I could barely even afford my flight back. As my plane landed on my cold and rainy side of the planet, I dreamed someday I would be back to that tropical paradise of Bali. Fortunately, I would soon discover the power of a dream. 2016 - I quit my job and chased my dream to make a living online 2017 - I started making money and moved to the place that made me happiest! I rented my first villa in Bali 2019 - I bought my first ever home (of course in Bali) Fast forward a few years, risks, decisions, failures and successes later… well that chapter has yet to be written. BUN RIEU | SHRIMP CRAB PORK NOODLE SOUP Makes: 5-6 bowls SAUTEED TOMATOES 1/4 cup cooking oil 10 cloves minced garlic 1 small onion, diced 3-5 roma tomatoes, cut into wedges* 1 TBSP fish sauce *if you like tomatoes, then use more or vice versa. DRIED SHRIMP 3 oz dried shrimp 5 cups hot water MEAT PASTE: 14 OZ prawn in spices 12-16 oz canned crab meat 1 lb ground pork 2-3 eggs ADDITIONAL INGREDIENTS 2 liters of water 1-2 lbs pork riblets 1.5 tsp salt 2 TBSP sugar 1.5 TBSP tamarind powder 1 TBSP shrimp paste Fried tofu FOR SERVING: Noodles Scallion, chopped Cilantro, chopped Cabbage, thinly sliced Morning glory, shredded Banana blossom, thinly sliced Purple or yellow onions, thinly sliced SAUTED TOMATOES 1. Heat up 1/4 cup oil. Once oil is hot, saute garlic til fragrant. 2. Then add diced onions and saute til slightly translucent 3. Then add tomatoes and fish sauce. and cook for 1-3 minutes. Not too long, tomatoes should still hold shape 4. Set this aside DRIED SHRIMP 1. Soak all of the ingredients listed under DRIED SHRIMP for at least 30 mins. After 30 mins, remove shrimp BUT RESERVE THE LIQUID 2. Add shrimp into a food processor and blend 3. After your shrimp has ran through a food processor, add it to all the ingredients listed under MEAT PSATE. Combine well and set aside. SAUTED TOMATOES 1. Heat up 1/4 cup oil. Once oil is hot, saute garlic til fragrant. 2. Then add diced onions and saute til slightly translucent 3. Then add tomatoes and fish sauce. and cook for 1-3 minutes. Not too long, tomatoes should still hold shape 4. Set this aside BROTH 1. Combine 2 liters of water with the 5 cups of hot shrimp water. Bring this to a boil 2. Once boiling, add blanched spareribs* and bring back to boil. Once boiling again, reduce heat and simmer for 30 mins. 3. After 30 mins, add your SAUTED TOMATOES, salt, sugar, tamarind powder and shrimp paste. Combine well until ingredients are dissolved. 4. Then add fried tofu and MEAT PASTE. When adding MEAT PASTE, add 1 large spoonful at a time. Cook this until the PASTE floats to the top. 5. Your broth is now done 6. Assemble your bowl with vermicelli noodles, scallion, cilantro and preferred veggies and topping *spare ribs: I placed my spareribs/ pork into a pot and filled it with water, 3-4 slices of ginger and ~10 pepper corns. I brought this to a boil and then dumped the liquid and washed the pork clean. The ginger and peppercorn helps with the small of the pork.
