Here’s a copycat recipe for steamed Shrimp Rice Rolls using rice paper as a shortcut! It’s one of my favorite Dim Dum dishes to order, but a little complicated and tedious to make at home. So here’s a simple version with just shrimp, green onions and rice paper. The ingredients for the sauce is 2 tbsps soy sauce, two tbsps of oyster sauce, 2 tbsps of sesame oil, 1 tbsp of sugar and 1/4 cup of water. How to make Udon Stir Fry Noodle! It’s basically an end of the week dump meal of all the veggies I have leftover in my refrigerator. The ingredients are 3 package of udon noodles, 2 tbsp of avocado oil, 1 small sliced onion, 1 cup julienne carrots, 1 cup sliced shiitake mushrooms, 3 cups cut up napa cabbage, 2 tbsp minced garlic, 2 tbsp sesame oil, 1 1/2 tbsp soy sauce, 1 1/2 tbsp dark soy sauce, 1 tbsp brown sugar, 1 tsp black pepper and 1 oz sliced green onions. Start by simmering the packaged udon noodles in hot water for 2-3 minutes for the noodles to separate and immediately drain and rinse under cold water. In a large pan heat avocado oil to medium heat and add onions, carrots and shiitake mushrooms. Cook for 2-3 minutes and toss in napa cabbage and garlic. Cook for another 2-3 minutes before adding udon noodles, sesame oil, soy sauces, oyster sauce, brown sugar and green onions. How to make Restaurant Style Chinese Broccoli! It’s the perfect side dish to add to your Lunar New Year Feast. Start with about 2 pounds of Chinese Broccoli, trim the ends of the leaves off and slice the ends of the large parts of the stems in half. Simmer some hot water, add 2 tbsps of vegetable oil and broccoli. Let simmer for 2-3 minutes and drain. For the oyster sauce you need 1/2 cup of water, 1/2 tbsp of cornstarch, 1 tbsp minced garlic, 1 tsp sugar, 3 tbsps of oyster sauce. Simmer for 3-4 minutes until sauce thickens and cook for 5 minutes. In a small saucepan simmer 1 cup of sago (tapioca pearls) for 10 minutes, turn off heat and cover with a lid for 15 minutes, rinse and drain under cold water. In a large bowl add the sago, 16oz’s of cut strawberries, 1 jar of coconut jelly, 1 can of evaporated milk, 1 can of coconut milk and 1/2 a can of condensed milk (more if you want it more sweet). Save my recipe for homemade Dill Pickles! Depending on how much cucumbers you have and how tight you pack your jars will determined how much brine you need. Pack cucumbers, dill, mustard seeds and garlic cloves in mason jar. I used 1 gallon sized jar and simmered about 6 cups water, 3 cups distilled white vinegar and 3-4 tbsp of salt. I ended using about 2/3 of my brine because I packed my jar with cucumbers. Let brine cool for 20 minutes before pouring into jar. Pour the brine leaving about a 1/4 inch on top, seal not too tight, boil for 15 minutes, remove from heat and seal tightly with a towel, cool for 24 hours on the counter. The lids should concave slightly once it starts cooling. If it doesn’t place in the fridge. But typically you can placed in pantry. How to make Shrimp Fried Rice! I make fried rice at least once a week because we always have leftover rice. In a large pan heat up 2 tbsps of butter on medium heat and then add 1 pound of shrimp and 2 tbsps of minced garlic. Cook for 2-3 minutes then add 3 cups of rice, 2 eggs and 2 tbsps of sesame oil. Cook for a 1-2 mins to reheat the rice then add 1 cup of frozen assorted veggies and cook for another 2-3 minutes. Here’s the recipe for Lasagna Soup - in a large pot add 2 tbsp of olive oil, 1 diced small onion and 4-5 minced garlic cloves. Cook for a few minutes on medium heat and then add 1 pound of ground beef, 1 tsp of salt and 1 tsp of black pepper. Cook until beef is 75% done and add 2 tbsp of tomato paste. Cook for another few minutes and add two 15oz cans of tomato sauce, 2 tbsp dried oregano, 1 tsp salt, 1 tbsp of sugar, 1 tsp garlic powder, 1 1/2 quarts of chicken stock and break up half the box of lasagna sheets which is about 8oz’s of dried noodles. Simmer for 10 minutes and toss in 1 oz of chopped basil and two handfuls of spinach. Simmer covered for another 5 minutes. Save my recipe for Steamed Crab Rolls! I used sweet Snow Crab this time and I think it tasted better than the shrimp version. I dunked my rice paper in cold water and let soften before adding snow crab and green onions. Brush with sesame oil after rolling so the rice paper doesn’t stick to the plate or each other when steaming. Steam for 8 minutes and serve with dipping sauce. Save my recipe for Pad Thai! My family loves any noodle dish and this is a perfect dinner for us. There’s actually a few steps to prep before cooking the Pad Thai. Like making the sauce, soaking the rice noodles and cooking the shrimp and tofu first. Ingredients: 1 pound of shrimp, 1 package of firm tofu, 1 package 14oz dried flat rice noodle, 2 shallots diced, 2 tbsp minced garlic, 2 eggs, a handful of bean sprouts, 1/2 cup sliced green onions 1/2 cup chopped peanuts and 7 tbsp avocado oil. Ingredients for the sauce: 2 tbsp tamarind paste, 1 tbsp fish sauce, 1 tbsp oyster sauce, 1/2 tbsp dark soy sauce and 2 tbsp of shaved palm sugar or 1 1/2 tbsp brown sugar. Instructions: Boil a pot of hot water, turn off heat and soak rice noodles for 10-15 minutes. Noodles should firm and partially cooked. Drain and set aside. Slice tofu into cubes and pat dry with paper towel. In a large pan heat 3 tbsp avocado oil to medium and cook tofu on each side for 3-4 minutes until golden. Remove from pan. Peel and divine shrimp and season with a little salt. In a large pan heat 2 tbsp of avocado oil to medium heat. Cook shrimp on each side 3-4 minutes or until fully cooked. Remove and set aside. Heat Wok or Large pan to low medium, add 2 tbsp avocado oil, shallots and garlic. Cook for 1-2 minutes and add soaked noodles to finish cooking. Pour in sauce until noodles absorb, scramble two eggs, add bean sprouts, green onions, cooked shrimp, tofu and top with peanuts. Serve with a lime wedges. #padthai #asianrecipes #noodlerecipes

It’s National Fettuccine Alfredo Day and here’s a really easy recipe you can make for the family. It’s Fettuccine Alfredo with Chicken and Broccoli. No food is off limits in my opinion just in my moderation. Ingredients for the Alfredo sauce is 4 tbsp of butter, 16oz’s of heavy cream, 2 cups of grated Parmesan, 1 tsp of truffle salt ( regular salt if you don’t have it), 1 tsp garlic powder, 1/2 tsp black pepper. In a sauce pan melt butter on low/medium heat and then pour in heavy cream. Stir cream for 3-4 minutes to heat on low heat and then add seasonings and Parmesan cheese. Stir until cheese is melted and toss in cooked fettuccini pasta. For the chicken add 1 tbsp of avocado oil and season with 1 tsp of salt, 1 tsp of garlic powder, 1 tsp of paprika, 1/2 tsp of black pepper. Place on baking sheet and Bake at 375F for 35 minutes. For the broccoli place as much as you want on baking sheet, spray with oil, season with salt and sprinkle with grated Parmesan. Save this recipe for Korean Japchae! It’s a great side dish with dinner and perfect to bring to potlucks. Start by boiling one bundle of the sweet potato starch noodles for 5-6 minutes. Drain, rinse under cold water and cut up with scissors. Next make the sauce which is 1/4 cup of soy sauce, 1/4 of sesame oil and 1 tbsp of brown sugar. The last part is a little tedious because you have to cut up all the vegetables and cook it individually. You can cook them all together to save time, but remember to add the spinach last because that cooks fast. I sprayed the pan with oil and I started with sliced onions, cooked for a few minutes, removed from pan, then spray oil again and the sliced shiitake mushrooms, repeated this process with bell peppers, carrots, spinach, garlic and green onions. Save my recipe for Seafood Noodle Soup so basically a Seafood Pho! The base is still chicken broth because it has more flavor in my opinion. When I make this every one’s bowl is different. I only like seafood in mind, the hubby has chicken and seafood and the girls only like chicken in their noodle soup. The ingredients are 3 chicken leg quarters of a whole chicken, large pot of water, two small onions, 2-3oz’s of ginger, 1 oz rock sugar, 1 tbsp fish sauce, 1 tsp salt ( I always adjust amount according to my taste preference with salt and fish sauce) and in my spice bag is fennel seeds, coriander seeds, Star anise, cinnamon stick and cardamom. Bring heat to high, cover with a lid, bring down to medium low and cook for 45 minutes. I sometimes will add a few more cups of water because some of it evaporates and when cooking. Cook rice noodles for 45 seconds and rinse under cold water immediately. Garnish with bean sprouts, cilantro, green onions, and a fresh squeeze of lemon or lime juice.
