SO much flavour, packed with protein, lower in calories and even simple to meal prep!👇🏼 - Chicken: • 300g chicken breast, cubed • 1 tsp olive oil • Season with 1/2 tsp salt & pepper, 1 tsp paprika and 2 tsp cajun seasoning • Squeeze of half a lime - Creamy Cajun Pasta: • 1 cup any milk (I used 1%) • 2 tbsp light cream cheese (I used 95% fat free) • 2 tbsp tomato paste • 3 garlic cloves • 1/4 cup grated parmesan cheese • 1 tbsp cajun seasoning • salt and pepper (to taste) • optional: 1/4 cup pasta water (saved from when you make pasta. will help thicken the sauce) • 1 cup cherry tomatoes, cut in halves • handful of spinach - Notes: • This recipe is great for making in batches and meal prepping for the entire week. Store them in the fridge for up to 5 days. • Serve with chili flakes, more parmesan cheese, and/or cilantro. Mini biscoff cheesecakes 😍 INGREDIENTS 3 Biscoff biscuits 30g Biscoff spread 60g unsweetened yogurt 40g light cream cheese 20g whey protein 1 tsp stevia (for the cream mixture) 1 tsp stevia (for raspberry drizzle) 20g raspberries Method: Begin by crushing the 2 Biscoff biscuits in a resealable bag. Take a glass and place the crushed Biscoff biscuits at the bottom of it. In a bowl, combine 60g of unsweetened yogurt, 40g of light cream cheese, 20g of whey protein, and 1 tsp of stevia until well mixed. Layer the creamy mixture on top of the crushed biscuits in the glass. Melt the 30g of Biscoff spread in the microwave for 30 seconds until it's smooth. Rinse the raspberries, and then drizzle the melted Biscoff spread over the cheesecakes crush one more biscuit and sprinkle it over the cheesecakes followed by the raspberries Place the glass in the refrigerator to set.
