PLUMCAKE AL LIMONE DI PIERRE HERME’ INGREDIENTI: (Le dosi sono per una teglia 21x11 e permetteranno di ottenere un plumcake alto e grande come quello del video. Se avete uno stampo più grande il plumcake verrà più basso, ma i tempi di cottura saranno diversi. Vedi procedimento sotto) 400 g farina 00 o tipo 1 200 g zucchero semolato 6 uova a t. amb. 180 g panna fresca a t. amb. (Va bene anche quella vegetale) 180 g burro fuso, tiepido o 140 g olio di semi o evo 1 bustina di lievito da 16 g Buccia grattugiata di 4 limoni 1 presa sale Burro freddo per la crepa qb (opzionale) Per lo sciroppo: 140 g acqua 20 g zucchero semolato Succo di 2 limoni (filtrato) PROCEDIMENTO: Montare bene le uova con lo zucchero finchè non saranno belle chiare e spumose e avranno raddoppiato il loro volume. Poi, procedere inserendo gli altri ingredienti: panna, burro, scorsa di limone e lievito e farina setacciati. Amalgamare a mano finchè l’impasto non sarà bello omogeneo, poi rivestire con la carta forno una teglia da plumcake (con uno dei miei due metodi mostrati in un mio video precedente). Versarvi all’interno l’impasto e disporvi al centro delle striscioline di burro freddo. Queste faciliteranno la formazione della crepa. Cuocere a 180°, ventilato, per 1 ora. Se usate uno stampo più lungo e basso, come quelli tradizionali da plumcake, i tempi si riducono a 35-40 minuti. Fate sempre la prova stecchino. Mentre cuoce, preparare uno sciroppo scaldando in un pentolino zucchero, succo di limone e acqua. Appena sobbollirà togliere dal fuoco. Sfornare il plumcake e praticarvi subito dei fori con uno stecco da spiedini. Poi, versarvi sopra lo sciroppo.
