when i want a fast, easy meal but also want every meal to feel special… you know? deets below breakfast: lemony grated egg salad toast! just hard boiled some eggs (I could’ve done longer tbh), grated them, and mixed in some shaved parm and lemon juice. served over avocado toast. plus a salted maple matcha latte (steam some milk with a drizzle of maple syrup and a pinch of salt!) lunch: one pot spanakopita pasta! recipe is part of my substack series “30 minute budget meals” — linked in my profile!! dinner: coconut rice with honey garlic sriracha salmon with cucumbers and scallions. to make, I prepared 1 cup of rice with 3/4 cup coconut milk and 3/4 cup water (pressure cooked for 15 minutes) natural release for 10. In a pot, I heated up 2 tbsp butter with 4 cloves of garlic, ~ 1 1/2 tbsp sriracha, ~2 tbsp soy sauce, and 1-2 tsp honey and mixed together (I kinda just eyeballed and tasted as I went lol). Spread over the salmon and bake for 15 minutes at 400 F. While salmon is baking, thinly slice 2 Persian cucumbers and marinate in some rice vinegar! then top with chopped scallions #whatieatinaday #EasyRecipes #healthyrecipes
