That’s what she said, but whatever #heffaaclub Recipe for sauce: •5 tablespoon mayonnaise •2 tablespoon condensed milk •1 tablespoon honey •1 tablespoon fresh lemon juice Mix well together. Taste and adjust Shrimps recipe: •1 lbs shrimp (peeled and deveined) •1/4 teaspoon salt •1/4 teaspoon ground pepper •1 egg white 1•Mix together and refrigerate for 5-10 minutes 2•Take shrimp out and coated with 1/2 cup cornstarch. 3•Deep fried shrimp at 400f. Fry for about 3-4 minutes. 4•Take shrimp out and toss with sauce. Enjoy 😉 Ps, best to make the sauce first. Let’s make tanghulu……..you can use whatever the hell fruit you want. Wash and pat dry. #heffaaclub Recipe: •Grapes or any fruit you prefer. •1 cup sugar •1/2 cup water 1• Cook the sugar until it get to 300 Fahrenheit. I don’t have a thermometer so my sugar was cooking for like 12-13 minutes on medium high before it was ready. Just because it’s bubbling doesn’t mean it ready. 2•Keep testing after 10 minutes. Once ready you want to turn the stove down to the lowest possible. This will keep the syrup from getting hard before finishing. 3•Completely coated the fruit and then into an ice cold bath for a quick few seconds. Heat just enough to dissolve the sugar. 2•In a bowl add egg. Break egg yolks by cutting it with scissors (don’t beat or mix) 3•In a large bowl add tapioca starch, rice flour, double acting baking powder and salt. Mix well Make sure over are ready before adding together the wet and dry ingredients. 4•Add all ingredients together and lightly mix. Do not over mix. 5•Run batter through a strainer then add butter. 6•Brush pan with butter and add in the batter. 7•Bake at 350 Fahrenheit for 50 minutes. After done leave oven door slightly open for 5 minutes before removing the cake. 8•Let cake cool off upside down for about 15-20 minutes. 9•Use your hands to loosen the the cake from the pan. Everyone has their own recipe and this is mine. Batter recipe: make 10-12 rolls •1 cup rice flour •1/2 cup cup tapioca starch •2 tablespoon potato starch •1 teaspoons salt •4 cup water •1 tablespoons cooking oil (vegetable) Please do not try to substitute any of the ingredients Mix well until smooth and let batter set for 30 minutes. 1•Bring steamer to a full boiling. Brush nonstick pan with a little oil. Put pan in to preheat (1-2 minutes) 2•Give batter a stir before pouring. Pour just enough to cover the pan (not too thick). 3•Cover the steamer and steam until batter slightly bubbles (3-4 minutes) 4• Remove pan and let it cool off before starting to roll (2-3 minutes). 5•Roll half way, add shrimp and roll the rest of the way. It’s better to work with 2 pan. While the first one is cooling and waiting to be roll. You can start on the second one. I got these small sheets from Walmart or online (Mainstay’s nonstick cookie banking sheet 13.2”X9.2”). Works perfectly for one rolls. These rolls are a little bigger than the normal rolls at dim sum. Sweet soy sauce: •6 tablespoons LIGHT soy sauce •3 tablespoons water •3 tablespoons brown sugar Heat until sugar dissolved. Taste and adjust Shrimp filling: Peeled and deveined shrimp. Lightly added salt, pepper, and cornstarch. Place on a plate. Steam on high for 4-6 minutes or until cooked. Depending on how big the shrimps are. Practice makes perfect. Crispy Salt and Pepper shrimp recipe……………..make it at home for a fraction of the price. Everyone has there own and this is my. Brought my shrimp from Costco but you can get head on shrimp at most Asian Supermarkets. Recipe: •1 tablespoons cooking oil •2 tablespoon minced garlic (more if preferred) •1-2 jalapeño (sliced) •1/4 cup shallots Recipe for shrimp 🦐 •18-20 jumbo head on shell on shrimp(deveined) •1/2 teaspoons garlic powder •1/2 teaspoons onion powder •1/2 teaspoons ground black pepper •1/4 cup cornstarch Mix well. Fry for 2-3 minutes at 400f. Quick fry on high. Will make the shrimp crispy on the outside but not overcooked on the inside. Place on cooling rack to stay crispy. Salt and pepper seasoning: •1 teaspoons salt •1 teaspoons ground black pepper •2 teaspoons sugar Mix well 1•In a pan or wok add oil, garlic, jalapeño and shallots. When fragrant toss in the shrimp. 2•Sprinkle with salt and pepper seasoning as much as needed and give it a good toss. Wasn’t that simple? Who should BA Jessica eat with next, comment below. #heffaclub Peanut sauce everyone has their own recipe and this is mine Recipe: •1/2 tablespoon cooking oil •1 tablespoon minced garlic •2 tablespoon chopped shallots •3/4 cup water •1/2 cup hoisin sauce •3 tablespoon peanut butter •1 tablespoon white vinegar •1/2 tablespoon sugar 1•In a pan add oil and garlic. Cook until garlic lightly golden. 2•Add shallots and continue to fry for a minute. 3•Add the rest of the ingredients in and mix well until everything is combined and smooth. Bring to a low simmer for 2 minutes. Sauce will thicken once cool off. If too thick just add a little more water and bring back to simmer. Store leftover in the fridge after completely cool off. Heat when ready to eat again. Filling: lettuce, mint, fish mint, Vietnamese coriander, cucumber, bean sprout, vermicelli noodle and shrimp. You can add whatever else you want. Air Fry Vietnamese Lemongras Chicken Noodle Bowl BÚN GÀ NƯỚNG Crispy on the outside but juicy on the inside. Making cheap chicken into delicious chicken. Recipe: •10 boneless chicken thighs with skin on •1 cup of my all purpose marinate sauce (pinned on reels) •2 tablespoons fresh garlic •2 tablespoons shallots •1-2 tablespoon chili garlic sauce (MTT brand @MTT Houston ) Mix well and let it marinate for 2-3 hours best overnight. Marinate recipe from scratch: • 10 boneless chicken thighs with skin on • 3 tablespoon fish sauce (3 crabs 🦀 brand) different fish sauce required different measurements • 3 tablespoon light soy sauce • 1/2 tablespoon dark soy sauce • 1-2 tablespoons chili garlic sauce • 2 tablespoon minced garlic • 1-2 tablespoons chili garlic sauce • 1/4 cup finely chopped lemon grass (more if prefer) • 2 tablespoon cooking oil • 2 tablespoon sugar • 1 teaspoon msg (optional) • 1 teaspoon ground pepper • 3 tablespoon oyster sauce • 3 tablespoon water 1•Mix well until sugar dissolved. Marinate for 30 minutes or overnight in the refrigerator. 2•Air fry skin side up at 350f for 25 minutes. Some air fryer are hotter than the other. Please check a few minutes before time is up. You can grill, air fry, bake or pan fry. Enjoy You can marinate a lot. Bánh Tráng Nướng one of Vietnamese most popular street food. You can add whatever toppings you like. These rice paper are thicker than the one we used for gỏi cuốn/fresh spring rolls, but thinner than the Vietnamese rice cracker bánh đa. They come in clear or yellow with sesame seeds. You can ask relatives to get you some on their visit. Hopefully one day it will be available here in the US or maybe it’s here already. I just haven’t seen any yet. Cost about 5 cents a piece. You can find them at most market in Vietnam.
