Korean Cucumber Kimchi 🥒🔥 ⠀ RECIPE 8 small cucumbers 6 tbsp salt 2 liters water ⠀ Kimchi filling: 3 spring onions (or Chinese garlic chives) 1 medium carrot 5 tbsp Korean red chilli flakes („gochugaru“) 3 tbsp vegan shiitake „oyster sauce“ (available in Asian shops) 3 garlic cloves 2 tbsp ginger 1 tbsp sugar (or 1/2 grated apple) 1 tbsp sesame seeds 2 tbsp soy sauce a little water (about 100 ml) ⠀ ❶ Cut the cucumbers lengthwise as shown in the video. ❷ Dissolve the salt in warm water and leave the cucumbers in the brine for 1 hour. ❸ Mix all the ingredients for the filling and stuff it into the cucumbers. ❹ Place the cucumbers in a clean jar and seal airtight. ❺ The cucumbers can be fermented for 1-2 days at room temperature or refrigerated immediately and eaten fresh. Fermentation intensifies the flavours and creates more acidity, but it is not quite as crunchy and refreshing. Sourdough Baguettes 🥖🇫🇷 ⠀ RECIPE 450 g bread flour 50 g whole wheat flour 380 g water 50 g active sourdough starter (use 100 g if below 22°C) ⠀ ❶ In a bowl mix flour and water. Cover and let it rest for 15 minutes. ❷ Add the active sourdough starter and salt, mix to combine, then cover and rest for 30 minutes. ❸ Let the dough ferment at room temperature for 4-8 hours or until almost doubled in size. Stretch & fold the dough every hour or whenever it has relaxed. ❹ Let the dough ferment in the fridge overnight or up to 24 hours. ❺ Divide the dough into 4 even pieces. Preshape and let it relax for 15 minutes. ❻ To shape the baguettes fold one side to the middle, then fold the other side onto the middle and fold again to seal the edges and create more tension. Thinly press and roll out the edges.
❼ Place the baguettes on a baking tray and let them proof for another 1-2 hours. ❽ Score using a razor blade or sharp knife. Then bake at 250°C (preferably with steam in the first 8-10 minutes) for 15-20 minutes until golden-brown.
