Grilled Steak Tacos Grilling season is here and you need to get these on your menu! Recipe • Marinate a ribeye for 1 hour in: ½ cup of @Dales Seasoning , juice from 1 orange & 1 lime, 1 tbsp olive oil, 2 tbsp brown sugar, 1 tbsp bbq rub, 4 cloves chopped garlic and ¼ cup beef broth • Make the guacamole by mixing ingredients in a bowl, then refrigerate. 2 avocados, 1 diced Roma tomato, ¼ cup red onion, 2 diced jalapeños, ¼ cup cilantro, juice from 1 lime, 1 tsp sea salt and 1 tsp black pepper • Blend Garlic Chipotle Crema: ½ cup Mexican crema, 4 Chipotle peppers in adobo sauce, 1 head roasted garlic and ¼ cup water. • Grill 2 ears of corn on the @Kamado Joe until they have char on all side. • Grill the marinated steak over high heat and keep flipping the steak every 1 minute. Remove the steak once it reaches an internal temp of 135F and let it rest for 10-15 mins • Grill corn tortillas for a couple minutes then add Oaxaca cheese and let it melt. • Assemble the tacos with Guac, steak, corn, crema and cotija cheese . . #tacos #delicious #homecooking #steak

Recipe • Cube up a well marble chuck roast in to ⅙ Use @Sweet Baby Ray’s Kickin’ Barbecue Hot Sauce as a binder, then seasoning it up with a salt, pepper, garlic blend, and your favorite bbq rub. • Place them on the smoker at 275 for 3 hours • Once the bark is set, remove them and place them in a foil pan with 4 tablespoons of butter, 1 cup cherry cola and Sweet Baby Ray’s Original Barbecue Sauce • Cover and foil then place back on the smoker for another couple hours • Assemble the homemade ranch with: 3/4 cup sour cream, 1/2 cup mayo, 1/4 cup beef broth, 2 tbsp Kickin Barbecue Hot Sauce, 1 tbsp dill, 1 tsp each: garlic powder, onion powder, ½ tsp each: salt and pepper. • Assemble Corn Salad: 1 cup of grilled corn, 1 diced red bell pepper, 1/4 cup diced jalapeño, 1/4 cup diced red onion, 1 bunch cilantro, juice from one lime, 2 tablespoons of mayo • Once the beef reaches 205 internal and is fall apart tender, remove it from the smoker then shred it up. • Assemble the tacos on a corn tortilla with Oaxaca cheese, bbq beef, corn salad and ranch . . #bbq #tacos #delicious #homecooking

Recipe • Preheat the @Kamado Joe to 250F • In a bowl, mix together 1 block of softened cream cheese, 2 diced jalapeños, 1/2 lb crispy chopped up bacon, 1/4 cup shredded cheddar cheese and 1 tbsp garlic powder. • Remove the skin from the salmon, then season it with your favorite bbq rub. • Spread the cream cheese mixture on top of the salmon. • Roll the salmon nice and tight, starting on the tail end. • Secure with twine then season with more bbq rub. • Insert the @MEATER 2 Plus in the middle. • Place them on a soaked cedar plank, then put them on the grill indirect of the heat at 250F for 40 mins. • Glaze with BBQ sauce the last 15 minutes. • Remove once the internal temp reaches 140F and rest for 3 mins. . . #bbq #salmon #delicious #Recipe #cooking

Bacon Ranch Potato Salad Recipe • Fry bacon in a skillet over medium heat until crispy. Finely chop the bacon then set aside for later. • Peel potatoes then cube them into ½ inch x ½ inch cubes • Fry them in 3 tbsp of bacon grease in a large skillet. Pineapple Bourbon Party Ribs If you haven’t made party ribs yet, you need to make these at your next BBQ, better yet Fourth of July! I loaded my @Weber Grills Searwood Wood Pellet Grill to the max for this cook with 6 racks of ribs. This grill can handle grilling for an entire party! Recipe • Preheat the Weber Searwood Pellet Grill to 275F, using cherry pellets for a sweet smoke flavor. • Cut 6 racks of baby back ribs into individual ribs then generously season them on all sides with your favorite BBQ rub. • Place them on the smoker at 275F for 2 hours, spritzing every 30 mins with pineapple juice. • Make the homemade pineapple bourbon sauce by combining all of the ingredients in a pot then cooking over low heat until thick. Ingredients: 1 cup of ketchup, 1.5 cups brown sugar, ½ cup crushed pineapple, 8oz bourbon, 2 tbsp honey, 1 tsp each: garlic powder, coarse black pepper, salt • After 2 hours, place the ribs in a foil pan, then add 4 tbsp of butter and 1 cup of BBQ sauce. Brisket Street Corn Tacos + Alabama White Sauce Brisket makes for some of the best tacos! I smoked this juicy brisket to perfection using the new @Weber Grills Searwood XL 600 Pellet Grill. This thing is a beast! #webergrills Recipe • Trim a brisket then use yellow mustard as a binder and season with SPG. • Smoke the brisket on the Weber Grills Searwood at 250F for 7 hours. • Wrap in butcher paper and beef tallow once the internal temp reaches 170F and the bark is set. • Place back on smoker until the internal temp reaches 205F and it’s probe tender. • Place in a cooler and rest for 1-3 hours - longer the better! • Cook the corn on the Searwood griddle accessory until it’s charred on all sides. • Cut corn from Cobb then assemble the street corn. Refrigerate until serving. • Put together the Alabama white sauce by combining all ingredients then mixing. Refrigerate until serving. • Slice the brisket against grain then chop into bite size pieces. • Toast tortillas then add Oaxaca cheese until melted. • Assemble taco with brisket and street corn then top with Alabama white sauce.
