One pot thai green curry noodles 🥳 550 cals | 25g protein - 1 packet instant noodles - 100g Shrimp - 200ml Light Coconut Milk - 1/2 cup chicken stock - 2 tablespoons Thai Green Curry Paste - 1 teaspoon sweetener - 1 tablespoon Fish Sauce - 1 cup Broccolini - 1/4 Carrot - 1/2 Red bell pepper - 1/2 spring onion Method: 1. In a saucepan, add the chicken stock, light coconut milk, and Thai Green Curry Paste. Simmer the mixture over medium heat. 2. Add the instant noodles to the saucepan and cook them according to the package instructions. 3. When the noodles are almost done, add in the shrimp, broccolini, carrot, red bell pepper, and spring onion. Cook for a few more minutes until the shrimp is no longer pink and the vegetables are tender. 4. I ate recipes like this everyday on my 20+ kg weight loss journey. This healthy pasta is so easy to make and the perfect comfort food that won't throw you off track. Ingredients: - 175g cooked Chicken Breast - 1/2 Red onion - 1 Carrot - 1 Capsicum - 2 Tomatoes - 100g Light Cream Cheese - 100g Pasta - 6 Garlic cloves - Bunch of fresh basil - 2 tsp Chicken stock - 1/2 cup Water Method: 1. Preheat your oven to 180°C (350°F) and prepare a baking tray. 2. Peel the red onion, carrots, capsicum, and tomatoes. Cut them into chunks. 3. Place the peeled vegetables on the baking tray and bake them in the preheated oven for about 20 to 25 minutes, or until they are soft. 4. Once the vegetables are cooked, transfer them to a blender. 5. Add the light cream cheese, chicken stock, water, and fresh basil to the blender. 6. Blend all the ingredients together until well combined and smooth. 7. In the meantime, cook the pasta according to the instructions on the packet. 8. Once the pasta is cooked, drain it and set it aside. 9. In a pan, combine the cooked chicken, pasta sauce, and cooked pasta. 10. Heat the mixture over medium heat, stirring occasionally, until everything is heated through. 11.
