Tender cajun seasoned chicken on top of crispy diced potatoes, drizzled with a creamy Cajun sauce THEN topped with bacon bits 😮‍💨 Macros 470 calories 52gP / 9gF / 56gC Serves: 2 Shopping list ✍️ - 300g chicken breasts - 3 tsp Cajun seasoning - Squeeze of lemon juice - Salt & pepper - 400g potatoes, diced - 2 tsp paprika - 1/2 tsp garlic granules - 1/2 medium onion, finely diced - 1/2 red & yellow pepper, finely diced - 60-80ml chicken stock - 60g light cream cheese - 2 bacon rashers - Fresh parsley Method Season diced potatoes with paprika, garlic granules, salt & pepper. Air fry on 190C for 15 mins, shaking every 5 mins. Season the chicken breasts with salt, pepper, 2 tsp Cajun seasoning and a squeeze of lemon. Air fry on 190C for 15-17 mins depending on the size of the chicken breast. For the last 4 minutes add the bacon. In the meantime in a pan fry the onions for a few mins in low calorie spray to soften. Add the peppers and cook for a further few minutes, then mix in 60ml stock, cream cheese & 1 tsp Cajun seasoning. Cook for a further 1-2 mins and add more stock if needed. Dip the chicken into whisked egg then cornflour, spray with low calorie spray and place in the air fryer lined with parchment paper and air fry on 190C for 7 mins, flip, spray again and air fry for a further 7-9 minutes. Season the cubed potatoes with salt, pepper and paprika. Air fry on 190C for 15 mins, shaking every 5 minutes. In the meantime spray a pan with low calorie spray and fry the onions and peppers for 2-3 mins to soften. Bolognese sauce, bechamel & cheddar topped bagels and air fried to absolute perfection 😮‍💨 Macros 438 calories 46gP / 12F / 38gC Serves: 2 Shopping list ✍️ - 250g lean beef mince - 1/2 onion, finely diced - 4 mushrooms, finely diced - 1 beef stock cube - 250g passata - 1 tsp mixed herbs - Pinch garlic granules - A good pinch black pepper - Pinch of sweetener or sugrr - 2 thin bagels - 80g lasagne sauce (white sauce) - 60g light cheese Method Fry the onion and mushrooms in low calorie spray for a few minutes to soften then add the beef mince and fry for a further 3-4 mins. Add the rest of the ingredients and 250ml of boiling water. Mix well and simmer for 8-10 minutes or until the water has evaporated. Top the bagels, then spread over the bechamel and scatter over the cheese. Crispy cornflake chicken coated in peri peri marinade, with melted cheddar, hash brown and grilled halloumi 😮‍💨 Macros 491 calories 41gP / 17gF / 43gC Serves: 2 Shopping list ✍️ - 200g chicken breast - 2 tsp peri seasoning - Squeeze of lemon juice - Salt & pepper - 1 egg or egg white - 30g crushed cornflakes - 2 tbsp peri marinade - 2 mini brioche buns - 40g light cheddar - 2 tbsp Perinaise - Lettuce - 20g light halloumi, cooked - 2 hash browns (I adore the Aldi McDonald’s dupes!) Method Tenderise the chicken breasts, season with salt & pepper, most of the peri seasoning and a squeeze of lemon juice. Mix in the remaining peri seasoning to the crushed cornflakes, then dip the chicken into whisked egg then the cornflakes. Air fry on 190C for 7 mins along with the hash browns, flip, then another 5-7 mins, for the last 2 mins add the cheddar. Macros 498 calories 49gP / 14gF / 42gC Serves: 2 Shopping list ✍️ - 250g lean beef mince - 1/2 onion, finely diced - 4 mushrooms, finely diced - 1 beef stock cube - 250g passata - 1 tsp mixed herbs - Pinch garlic granules - A good pinch black pepper - Pinch of sugar - 1 bay leaf - 2 flatbreads (I used deli kitchen) - 60g light cheddar 🧄Garlic butter: 10g light butter, a pinch of garlic granules & parsley Method Fry the onion and mushrooms in low calorie spray for a few minutes to soften then add the beef mince and fry for a further 3-4 mins. Add the rest of the ingredients and 250ml of boiling water. Mix well and simmer for 8-10 minutes or until the water has evaporate and remove the bay leaf. Brush the garlic butter over the flatbreads and air fry on 200C for 4 mins. Top with the bolognese then cheese and air fry on 180C for 3-4 mins. Macros 493 calories 42gP / 17F / 41gC Serves: 2 Shopping list ✍️ - 250g lean beef mince - 2 tsp taco seasoning - Beef stock cube - 100g Passata - Heaped tbsp tomato purée - 2 tbsps reduced-fat sour cream - 1 tomato diced - Fresh coriander - 200g shop-bought skin on fries 🫕 Nacho sauce: 2 light plastic cheese slices, 70g semi skimmed milk & 30g low fat grated cheese Method Air fry the chips on 200C for 12-15 minutes. Fry the beef mince in a pan with spray oil for a few minutes then crumble over the beef stock cube and add a dash of boiling water. Mix in the passata & taco seasoning and fry for a further few minutes. For the cheese sauce place the cheese slices & milk in a pan, heat & whisk until smooth, then mix in the grated cheese until the sauce turns this thick. Greek style chicken flatbreads 🥵 Such a simple, easy recipe with plenty of flavour! Made in less than 10 mins too 🤌 Shopping list ✍️ Tzatziki 1 lemon 150g greek yogurt 4 chicken thigh fillets 1 tbsp chicken seaskning or all purpose seasoning 1/2 tsp cumin & paprika Salt & pepper 1/2 cucumber 1/2 red onion 200g cherry tomatoes 1 sprig of mint 4 Greek Style Flatbreads Method Squeeze the juice of 1/2 a lemon into 150g Greek yogurt along with 2 tsp chicken seasoning and a good pinch of salt & pepper and marinate the chicken thighs. Spray a pan with oil and fry the chicken for 4-5 minutes on each side or until cooked before slicing into strips. For the salad combine 1/2 cucumber, 1/2 chopped red onion, 200g halved cherry tomatoes and a sprig of finely chopped mint with the juice of 1/2 a lemon. Warm 4 Greek Style Flatbreads in the oven. Macros 407 calories 44gP / 9gF / 56gC Serves: 1   Shopping list ✍️ - 100g Chicken breast - 2 tsp tikka paste - 1 heaped tsp mango chutney - 3 tbsp light mayo - 2 pieces low calorie bread - 45g passsta - 30g reduced-fat cheddar - 15g shredded mozzarella - 5g sliced red onion Method Butterfly the chicken breast then season with 1 tsp tikka paste. Spray the air fryer crisp tray with low calorie spray, place the chicken in and spray again. Air fry on 190C for 12 mins, remove and let it rest. Mix the passata and remaining tikka paste together and spread evenly over the bread slices. Slice the chicken and mix with the mango chutney and mayo. One piece of bread add the chicken, red onion and half the cheese, on the other side just the cheese. 30 DAYS OF HIGH PROTEIN AIR-FRYER RECIPES Day 16| Meatball marinara sub 🥵   Super beefy seasoned meatballs in a gorgeous marinara sauc in a toasted roll and topped off with both mozzarella and cheddar for sooo much flavour 😮‍💨 Macros 554 calories 47gP / 14F / 55gC Serves: 2 Shopping list ✍️ - 250g lean beef mince - Beef stock cube - 1 tsp Italian seasoning or mixed herbs - 1/2 tsp garlic granules or powder - Salt & pepper - 250g Passata - 1 tsp sweetener or sugar - Heaped tbsp tomato purée - 2x 100g rolls ( I used the M&S submarine ones!) - 40g light mozzarella - 25g light cheddar Method Crumble over the beef stock cube over the beef mince, then season with 1/2 tsp Italian seasoning, 1/2 tsp garlic granules, salt & pepper. Roll into 6 meatballs, spray the air fryer with spray oil, add the meatballs then spray again. Air fry on 190C for 9 mins. 5 mins before the end carefully remove the crisp plate and add in the marinara sauce to coat the meatballs. Slice the roll in half, spread over some of the marinara sauce over, then add the meatballs and the cheese. Season with salt, pepper and 1 tsp mixed herbs, 1 tsp paprika and garlic granules. Coat in the flour, spray the crisp tray with low calorie spray and air fry on 190C for 7 mins, flip and cook for a further 6 mins. For the potatoes season generously with salt, pepper & 1 tsp paprika. Air fry on 190C for 15 mins shaking every 5. For the sauce fry the onions with low calorie spray or sundried tomato oil for a few mins to soften. Add the sundried tomatoes with the minced garlic for a minute then mix in 100ml chicken stock, single cream & grated Parmesan. Simmer until it starts to thicken then mix in the spinach, slice the chicken then mix that in.
