Macros 559 calories 46gP / 9gF / 71gC Serves: 2 Recipe Shopping list ✍️ - 250g lean beef mince - 1 beef stock cube - 1 heaped tbsp tomato purée - 2 tsps mustard - 400g baby potatoes - 10g roast potato seasoning - 10g paprika - 60g reduced fat cheese - Iceburg lettuce, sliced - Cherry tomatoes, diced - Sliced gherkins Sauce 🥣: 3x tbsp light mayo, 1 tbsp tomato ketchup, pinch of garlic granules, pinch of paprika and a dash of gherkin juice. Method Mix the sauce ingredients together and set aside. Boil the new potatoes until tender then smash with the bottom of a glass. Spray with oil then season with roast potato seasoning & paprika. Air fry on 200C for 14 mins, turning half way and spray again then for the last 4 mins cook on the highest setting. Garlic butter bolognese nachos 😮‍💨 It’s been a hot minute since I made bolognese so for the leftovers i made garlic butter nachos with 2 different cheeses… PERFECTION 🥵 Macros 528 calories 42gP / 21gF / 43gC Serves: 2 - 250g lean beef mince - 1/2 onion, finely diced - 4 mushrooms, finely diced - 1 beef stock cube - 250g passata - 1 tsp mixed herbs - Pinch garlic granules - A good pinch black pepper - Pinch of sugar - 1 bay leaf - 2 wraps (I used Missions chargrilled ones) Garlic butter 🧄🧈: 20g melted light butter, pinch garlic granules & pinch dried parsley Method Fry the onion and mushrooms in low calorie spray for a few minutes to soften then add the beef mince and fry for a further 3-4 mins. Add the rest of the ingredients and 250ml of boiling water. Mix well and simmer for 8-10 minutes or until the water has evaporated then remove the bay leaf. Spread the garlic butter over the tortilla wraps, slice into nachos and air fry on 180C for 4-6 mins or until crispy, shaking them frequently. Made in less than 10 mins too 🤌 Shopping list ✍️ Tzatziki 1 lemon 150g greek yogurt 4 chicken thigh fillets 1 tbsp chicken seaskning or all purpose seasoning 1/2 tsp cumin & paprika Salt & pepper 1/2 cucumber 1/2 red onion 200g cherry tomatoes 1 sprig of mint 4 Greek Style Flatbreads Method Squeeze the juice of 1/2 a lemon into 150g Greek yogurt along with 2 tsp chicken seasoning and a good pinch of salt & pepper and marinate the chicken thighs. Spray a pan with oil and fry the chicken for 4-5 minutes on each side or until cooked before slicing into strips. For the salad combine 1/2 cucumber, 1/2 chopped red onion, 200g halved cherry tomatoes and a sprig of finely chopped mint with the juice of 1/2 a lemon. Warm 4 Greek Style Flatbreads in the oven.
