My potato bake! Depending on how many potatoes you want to use, I’ll use between 300ml - 600ml. Cream sauce: Thickened Cream (based on 600ml) 1 x tbspn garlic powder 1 x tbspn vegeta 1/2 x tbspn mixed herbs Salt & Pepper Cook at 190 deg for 45-50 mins, take out, top with cheese & bake for a further 25-30 mins until golden brown 😘 #PotatoBake #Cooking

Chicken & Chickpea Taco’s This one utilises a can of chickpeas to make the meal go further & be more filling. Total cost of this meal was $16.50 It could be cheaper again by using salads you might already have at home, or by making it into a salad bowl instead, or mixing in rice to bulk it up even more! If you have fussy ones, they won’t know there is any extra veg in it, my husband & son didn’t notice 🤭 Ingredients: 500g Chicken Mince 1 x can chickpeas (rinsed) 1 x pkt taco/fajita seasoning 1 x jar salsa (3 x tbspn for chickpeas) 1 x pkt wraps/taco’s 1 x cup red onion diced 1 x cup can corn kernels 1 x cup cucumber Lettuce/Baby spinach leaves Method: Rinse your chickpeas & add to a blender Add in 3 x tbspn salsa Blend until combined into a paste In a pan, add chicken mince & brown Add in taco seasoning packet Fill packet with water & add Combine all ingredients & mix in well Add in remaining salsa & mix in Allow to simmer for 3-4 minutes on low Prep your salad Serve up! #ChickenMince #TacoTuesday #Chickpeas #BudgetMeal #Dinner #lunch #mealprep

Replying to @Wayno Chicken & Pesto Pasta This one is under $15 meal 🥰 This will feed 3-4 people Ingredients: 500-750g chicken breast diced Seasonings of choice 250g packet pasta of choice 1/4 cup pasta water 1 x jar Pesto (I used Basil) 1 x tspn minced garlic (used from home) 180g / 3/4 cup Greek yogurt 120g bag Baby Spinach Parmesan cheese (used from home) Method: Cook pasta til al dente Keep pasta water aside Dice chicken & season, cook through In a bowl, add pesto, pasta water, garlic & Greek yogurt and combine Pour onto pasta and stir through Add baby spinach & stir through pasta Place lid on for 2-3 minutes to allow heat of pasta to wilt spinach Serve up and top with chicken Garnish with Parmesan cheese & parsley 😘 #Pasta #PestoPasta #BasilPesto #BudgetMeal #BudgetDinner #EasyRecipe #Frugal

BTS Pasta (Bacon, Tomato & Spinach) Aka Tuscan Pasta The base ingredients were purchased from Aldi for $11.25, other ingredients used from home. Base / Purchased Ingredients 250g bacon Sundried Tomatoes Bag of baby spinach (could also use frozen) 1 x bag pasta of choice 1 x 385ml can Evaporated Milk (Can also use thickened cream) Ingredients used from home: Handful Parmesan cheese 1-2 tbspn minced garlic 2 x tbspn mixed herbs 1 x tspn chilli flakes (optional) Method: Add pot of water to stove, bring to boil Dice up bacon, cook til liking Add garlic, & I added a drizzle of ST oil Add in diced up sundried tomatoes Add pasta to water & cook al dente Add evaporated milk, herbs & chilli flakes Once it’s comes to temperature add spinach Allow to wilt, add in some pasta water Drain pasta & add to dish Stir through so all is coated in sauce Serve with option of parmesan cheese & parsley as garnish 🥰 Perfect as a whole meal with some chicken or even as a side dish too #Cooking #BudgetMeal #BudgetCooking #Pasta #MealChallenge

Curry Chicken! Such an easy mid week meal, especially when using a bbq chook! Ingredients: Bbq chook or cooked chicken 1 large brown onion (or 2 small) 2 carrots 1 cup frozen peas or frozen veg 2 tbspn garlic minced 2 tbspn tomato paste (1 x concentrated) 1-2 tbspn curry powder 2 tbspn flour (any kind) 2 cups chicken stock liquid 1 x 400g tins coconut milk Pinch of brown sugar Salt & Pepper to taste Method: Break up chook or cook your chicken Dice up veggies, set aside Cook onion, garlic & carrots Add in tomato paste & stir through Add flour & curry powder, mix to combine Add stock and turn down to medium heat Add pinch of brown sugar, salt & pepper Add in coconut milk Allow mixture to simmer for 10 mins Add any frozen veg at this point Prep rice or potatoes to side with Add in cooked chicken Add salt & pepper to taste Turn heat off and add lid until mash potatoes or rice is ready Dish up & enjoy 🥰 #Curry #Curriedchicken #Cooking #Dinner #Keenscurry #EasyRecipe #budget #frugal

Roast Veggie Soup This one is great for using up Veg in your fridge or cupboard at the end of the week! You can roast as many veg as you like 🥰 What I’ve used: 1 x red capsicum diced into chunks 4 x tomatoes quartered 1 x red onion halved 1 x zucchini cut into large chunks 1 x head garlic 2 x carrots diced 3 x stalks celery diced 4 x baby potatoes quartered 4 x cups stock (I used Vegeta) 1 x tbspn tomato paste 2 x tbspn parley finely diced 2 x tbspn dill finely diced For the roasted veg: 1-2 tbspn dried mixed herbs Oil of choice to drizzle veg (I used avocado) Salt & pepper Method: Pre heat your oven to 200 deg celsius Prep veggies and place on baking tray Drizzle with oil, add dried herbs, S & P Cook in the oven for 45 minutes (I remove the garlic after 30 mins so it cools down enough to touch to squeeze into pot) Dice remaining veg Add a pot to your stove and add a little oil Add your carrot & celery, simmer for few mins Add in your potatoes, continue to simmer Add tomato paste and stir in Add in your stock and stir in Lid on low to medium heat for 15 mins Add your roast veggies to the pot Lid back on for 10 minutes If you would like it like mine, blend your veg together with either a stick blender or carefully add to a blender. One Pot Sausage, Rice & Veg This one came together nice & quick, and of course you could add just frozen veg to this, I would add it at the time of adding the stock. The coconut milk is optional, I more so wanted to use it up from yesterday’s $10 meal cook up! Ingredients: 1kg sausages (I used beef) 1 x brown onion 1 x heaped tbspn minced garlic 1 x carrot diced 2 x celery sticks diced 1 x small zucchini diced 1 x tbspn tomato paste 1 x cup chicken stock 2-3 shakes Worcestershire sauce 2 x tbspn mixed herbs 1 x tspn chilli flakes (optional) 1/2 x cup coconut milk (optional) Salt & pepper to taste 2 x cups cooked day old rice #EasyRecipe #Dinner #Lunch #MealPrep #Food #cooking #Sausages #Rice #OnePotMeal #BudgetMeal

Sausage & Broccoli Casserole 1kg sausages (any type you like) 2 x brown onions diced 2 x cups mushrooms diced 2 x heaped tbspn minced garlic 2 x tbspn butter 1/4 x cup plain flour 2 x cups beef stock (use any stock you like) 2 x tbspn Worcestershire sauce 1-2 tbspn tomato paste 1/4 x cup water Salt & pepper to taste Mixed Fresh or Dried Herbs (I used Thyme & Rosemary) 1 x bag frozen broccoli (or fresh) Method: Brown sausages, remove from the pan Dice onion & add to pan Once browned, add minced garlic Cook for 2-3 mins, mix in tomato paste Add butter & melt Add mushrooms and mix, simmer for 5 mins Add cup flour, slowly add stock til all mixed Once sauce is smooth, add Worcestershire sauce, water, herbs. Taste test and add salt & pepper as needed Add sausages back in (I cut mine up) Lid on and simmer for 5-10 mins low heat Add broccoli and stir thru, lid back on to allow broccoli to defrost.
