Easy meal prep idea - sweet potato, zucchini bake. RECIPE: 2 sweet potatoes peeled & diced 2 zucchinis cut into quarter slices 1/4 chopped white onion 4 cloves minced garlic 1 1/2 tsp garlic powder 1 tsp rosemary 1/2 cup fresh parm Salt & pepper to taste In baking dish add sweet potatoes, 1/2 t garlic powder, 1/2 tsp rosemary, salt & pepper. Bake at 400 for 30 mins. Add 1 T oil to a cast iron. Saute onion until translucent. Brown ground turkey w/ minced garlic, 1 tsp garlic powder, 1/2 tsp rosemary, salt and pepper. Remove sweet potatoes from oven. Add cooked ground turkey & zucchini to baking dish. Bake another 10 mins. Remove & top with 1/2 cup fresh parm. 10 years and a lifetime to go 🩷 @freethemanjosh I love Josh because he's patient. He's the first person I go to when I need reason and sound advice. Not a single outing he doesn't call me on his way home just to chat. He kisses me goodbye every time he leaves the house and goodnight before bed -even when we're annoyed with each other. When he makes plans, my day is always taken into consideration. On days I don't feel my best he reminds me of all the things I am and do for our family. He remains levelheaded and optimistic in the most chaotic situations. When I'm tired he asks what he can do to help and contributes as a true partner does. He cooks me breakfast every morning, cleans my car out routinely, supports my business endeavors, and shows acts of selflessness daily. Josh always listens to our kids intently & thoroughly educates them in detail. He's affectionate and above all he constantly pushes me to be a better mom/person I truly mean it, I couldn't have found a better partner. Happy anniversary to my best friend. 3/22/14
