Tonight’s menu: Vegan Raspberry cheesecake 🍰 Base ingredients; -1 cup of walnuts -1 cup of dates (pitted and soaked in hot water for 30 minutes) -1 tbsp maple syrup -1 tbsp coconut oil Cashew cream layer; -2 cups of cashews (soaked in hot water for 30 minutes or more) -1/2 cup coconut cream -1/4 cup maple syrup -1 tbsp coconut oil -1 pinch of vanilla -1 tbsp of lemon Directions; -Blend the base and set in a square tin -Blend the cashew layer and put it on top of the base -top with frozen raspberries (or any fruit of your choosing) and shaved dark chocolate -put it in the freezer to set, cut it, then keep it in the freezer (this dessert stays in the freezer). #veganrecipes #dessert

Crispy Stick Tofu 🌶️🫚 ASMR Just giving love to some of my favourite, most used recipes featured in my WIEIAD’s; INGREDIENTS; Sticky sauce; 4 spring onions 2 inches ginger 1 large garlic clove 1 red chilli 1 tbsp vegetable oil 50g brown sugar 50ml soy sauce 2 tbsp tomato purée 1 tbsp rice vinegar 1 tbsp toasted sesame oil Salt to taste 2 tbsp water, plus more to loosen Tofu; 560g extra firm tofu (pressed) 4 tbsp cornflour 1 tsp salt Vegetable oil for frying Serve w/: 2 bags microwaveable basmati rice (or sticky rice) 1 spring onion 1 tbsp sesame seeds METHOD Roughly chop & then blend the ginger, garlic, chilli & spring onion before adding to an oiled saucepan & cooking for 2-3 minutes. Add the remaining ‘sticky sauce’ ingredients to the pan & simmer on a low heat to thicken. Rip the tofu in to nuggets & cover with the cornflour. Heat 2cm of oil in a pan & then add the nuggets & fry for 5 minutes until crispy & golden. Drain the tofu & add to the sauce, making sure all pieces are coated. Serve with rice & garnish with chopped spring onions & sesame seeds. #veganrecipes #plantbasedrecipes #crispytofu

Love language > Cajun Cauliflower Alfredo 🌱🍝 Tried this little vegan recipe yesterday evening and my god it was good. Ingredients; 1 medium cauliflower, leaves removed 40 g (1/3 cup) plain flour 80 ml (1/3 cup) plant-based milk 1 tbsp Cajun seasoning salt + pepper 80 g (1 cup) panko breadcrumbs olive oil 160 g pasta, we use tagliatelle I handful of fresh parsley, chopped (optional) grated vegan parmesan, for topping (optional) For the sauce: 300 g silken totu 4 tosp nutritional yeast 1/2 lemon juice only 1/4 tsp ground nutmeg 2 tbsp plant-based milk Method; 1. Preheat oven to 180°C fan / 400°F and line a baking tray with baking paper. 2. Slice the cauliflower head into two cauliflower steaks. 3. Combine flour, milk, Cajun seasoning & pinch of salt in a bowl. The batter should be quite thick so if necessary add a little more flour. Then add the panko breadcrumbs to a separate bowl. 4. Dip the cauliflower steaks into the batter until they're fully covered, then coat them fully in the breadcrumbs and leave to one side. 5. Heat a few tbsp of olive oil in a frying pan on a medium heat, add the cauliflower steaks and fry for 2-3 minutes on each side or until the panko is golden brown, then transfer them to the baking tray and wipe the frying pan clean for later. 6. Break remaining cauliflower into small florets and weigh them until you have 200g (7oz). Add the florets you weighed to the tray and drizzle them in olive oil. Bake for 15-20 minutes or until the cauliflower steaks are golden brown. 7. Cook your pasta. 8. To make the sauce, add the baked cauliflower florets to a blender with the silken totu, nutritional yeast, lemon juice, ground nutmeg, milk and pinches of salt and pepper. Blend until smooth, then pour it into the same frying pan as earlier and heat through for 2-3 minutes. 9. Transfer the pasta into the pan, adding a few small splashes of pasta water as you go to loosen the sauce. 10. Plate up past and then slice the cauliflower steaks and add them on top, followed by some chopped parsley and vegan parmesan. Save + try ⚡️

5 favourite plant-based breakfast recipes 🫐🥞 Whipped Tofu Toast 🍞🫐 Blend; -250g firm tofu -2 Tsp oil -4 Tsp maple syrup -juice and zest of 1/2 lemon -1 Tsp vanilla -2/3 Tbsp water Blend until smooth. -1 to 2 slices of sourdough. Topped w/ blueberries & maple syrup Biscoff & banana baked oats 🍌🥣 Makes 3-5 servings: -200g rolled oats -2 bananas, plus extra to decorate -60g vegan protein powder -420ml water/almond milk -1 tsp baking powder -1 tsp cinnamon -3 lotus biscuits -1 tbsp biscoff, melted just assemble as shown, bake in the oven (180 degrees) for 35-40 mins nut if its deep like mine then do the knife test. serve with oat yoghurt and a drizzle of biscoff. Avo & chilli cheese bagel 🥯🥑 -1/2 Avocado -1/4 cup Microgreens -1 pinch Black pepper, ground -1 Everything bagel -1 tbsp vegan cream cheese Coconut bread w/ gooey banana 🥥🍌 -1 large ripe banana, peeled -100g caster sugar -100g ground almonds (almond meal) -1 tsp apple cider vinegar -200ml plant milk -50g desiccated coconut -120g plain flour -1 tsp baking powder -1 tsp vanilla extract To serve; -1 banana -Splash of maple syrup -Jam of choice -Vegan greek-style yogurt Preheat the air fryer to 180°C, Grease or line a loaf tin with baking paper. Add all the ingredients to a food processor and blitz until smooth. Add mix to the loaf tin and smooth top. Air fry for 25-30 minutes, Test the centre is cooked by inserting a skewer - it should come out clean. Allow the bread to cool and at the same time, slice the skin of the remaining banana along the top. Open it a little and then slice the banana (in the skin) into chunks. Drizzle with a splash of maple syrup. Add to the air fryer along with the cake. Air fry for about 15-20 minutes, removing when bubbling. Top the bread slices with jam and yogurt and serve with the roast banana. Blueberry Protein Pancakes 🫐🥞 for 3-4 pancakes; -1 scoop of protein -1 banana -200ml soy milk -100g oats -1 tsp baking powder -1 tsp cinnamon -Pinch of salt method Topping -Melted blueberries -1/2 banana -Sprinkle of cinnamon
