I don’t like meal prepping… but I like to prep certain things. I think it’s beneficial to prep sauces & marinades. To chop up veggies before hand. To marinate meats. Making granola, chia pudding etc. Prepping ingredients vs whole meals. I’m not a fan of leftovers or standing in the kitchen for hours prepping lol. Ep. 1 | Easy Desserts. Better Boxed Brownies. While you don’t have to do all of these tips, just doing a few will elevate your boxed brownies. - Swap the oil for butter. This will make them richer and more decadent. - Swap the water for milk or heavy cream. This will help make a fudgy texture because milk has fat and water doesn’t. - Most brownie mixes require two eggs. Swap one of the eggs for two egg yolks and still use one whole egg. Doing this will increase the fat content as well to make fudge brownies. - Add 1 tsp of espresso powder. This will enhance and bring out the chocolate flavor more due to the bitterness of the espresso powder. - 1/2 c chocolate chips. I like to add some bitter sweet chocolate chips for extra crunch and to tone down the sweetness. You can really add any mix in you want. - Vanilla extract will add more flavor, but you can add almond or mint extract too for a different taste. - Using an 8x8 or 9x9 pan will make for thicker brownies than using a 9x13 baking dish. Caramel Apple Cheesecake Dip Serves 4-6 (more if you don’t eat a lot) Ingredients: 8 oz cream cheese softened ⅓ c powdered sugar 1 tsp vanilla extract ½ cup caramel sauce Toffee bits, butterscotch, crushed peanuts or heath bar bits (optional) Sliced apples for serving How to: In a mixing bowl add the cream cheese, powdered sugar and vanilla extract. Mix together with an electric mixer until smooth. Spread the cream cheese mixture into a small baking dish. I used a 1 quart dish. Evenly spread the caramel sauce on top of the cream cheese mixture. Melting the caramel sauce a little helps to spread it better. Add the crunchy bits on top of your choosing or you can leave it off and it will be just as good. You can eat it right away or let it sit in the fridge for an hour or so. Eat and enjoy! Quick & Easy Caprese Sandwich My new and improved recipe website will be ready on March 7th! I can’t wait! All my recipes in one place, easily accessible and free at your fingertips. I’m still cleaning out my pantry but just not calling it that because it’s too much pressure 😅. Pesto: about 2 cups of basil 1/2c pine nuts (toast them for about 5 minutes) 1-2 bulbs of roasted garlic (or 4 cloves minced garlic) 1/2c extra virgin olive oil 1/2c parmesan cheese Zest of half a lemon squeeze of half a lemon juice Salt and pepper to taste How to: Add all ingredients to a food processor or blender and blend until pretty smooth. Will last 1 week in fridge but you can freeze. Balsamic glaze: 1c balsamic vinegar 1/4 c brown sugar or honey How to: Mix balsamic and sugar in a saucepan over medium high heat. Keep stirring until all the sugar has dissolved. Once boiling reduce the heat to low and let simmer until the glaze has reduced and is thick. Stir occasionally. This will take about 15 minutes. Let cool and put in an air tight container in the fridge. Will last two weeks. Easy lunch idea, caprese sandwich, quick lunch, Italian #caprese #vegetarian #sandwich #easylunch

Grinder sandwich sliders. Recipe below. Serves 4-6 (2-3 sliders each) Ingredients: Sliders: 12 hawaiian rolls ½ lb hard salami ½ lb salsalito turkey ¼ lb sliced provolone cheese Garlic Butter: 3 tbsp melted butter ¼ tsp Garlic powder ½ tsp Italian seasoning 1 tbsp grated parmesan cheese Grinder Salad: ¼ c mayo 2 tsp Djion mustard 1tbs apple cider vinegar ¼ tsp salt ¼ tsp black pepper 2 ½ cups shredded iceberg lettuce ¼ c hot sliced sandwich peppers ¼ c thinly sliced red onions 1 large tomato thinly sliced How to: Preheat the oven to 350. Mix together the melted butter, garlic powder, italian seasoning and parmesan cheese in a small dish and set aside. Slice the hawaiian rolls in half horizontally. Put the bottom half in a 9x13 baking dish. Add the salami and turkey on top then the provolone cheese. Put the top of the rolls on top. Brush the tops with the butter mixture. Cover with foil and bake in the oven for 15 minutes on the middle rack. While that’s baking we will make the grinder salad topping, the best part! In a large mixing bowl whisk together the mayo, mustard, vinegar, salt and pepper. Once combined add in the lettuce, peppers and onion and toss together. Remove the sliders from the oven and carefully remove the top, you might want to let it cool for a few minutes first. Add the salad mix on top and then the tomatoes evenly on top. Put the Hawaiian roll tops back on. Serve, eat and enjoy!

Easy Spinach Artichoke Dip Recipe Below: Ingredients: 1 garlic clove minced 1 8 oz can artichoke hearts drained, rinsed & chopped 8 oz cream cheese softened to room temp 1/3 cup sour cream 1 10z packaged frozen chopped spinach thawed and juice squeezed out 1 cup shredded mozzarella cheese 1/2 cup shredded parmesan cheese 1/2 cup shredded provolone cheese Pinch of salt 1 tsp Red pepper flakes How to: Preheat the oven to 400 degrees. Grease a small baking dish. In a mixing bowl add the chopped artichoke, cream cheese, sour cream & spinach. Start to mix it up. Add in the cheeses, garlic, salt and red pepper flakes. Mix it well to combine. Add the mixture to the baking dish. Bake for 30 minutes at 400 or until golden brown on top. Just check on it after 20 minutes to see if it's browned or not. Serve with tortilla chips or mini toasted baguettes. Dip and enjoy! Bring this spinach dip recipe to game day and it’ll be a hit. Garlic butter shrimp & asparagus | recipe below 🤍 Makes 2 servings: Ingredients: 1 lb jumbo shrimp peeled and cleaned 1 big bunch of asparagus (ends chopped) 4 tbsp of butter (divided) ½ tbsp olive oil Salt and pepper to taste 4 cloves of garlic minced ¼ tsp Red pepper flakes 1 tsp lemon pepper Juice of ¼ a lemon 1 tbsp of fresh parsley chopped How to: Heat a large skillet over medium heat. Melt 2 tbsp of the butter in the pan and add the asparagus, season with salt and pepper. Cook, shaking the pan occasionally to flip the asparagus. After 3-4 minutes, move the asparagus to one side of the pan. In the same pan, add the remaining tablespoon of butter. Then add the shrimp in a single layer. Season the shrimp with some of the lemon pepper and red pepper flakes. Add the minced garlic over the shrimp and asparagus. After 2 minutes, flip the shrimp and toss the asparagus. Squeeze the lemon juice all over. After a minute or two remove the pan from the heat and sprinkle the parsley over the shrimp. Serve immediately, eat and enjoy. I told y’all there’s food at home! Note: I usually add Italian seasoning to the shrimp too but forgot haha. Shrimp & Broccoli Alfredo Serves 2. Takes about 30 minutes. Ingredients: 8oz of pasta 1 ¼ c broccoli chopped 1/2 lb jumbo shrimp peeled and cleaned 5 tbsp butter 1 ¼ c heavy cream room temperature 3 cloves garlic minced ½ tsp Lemon pepper salt pepper red pepper flakes 1/2 c grated parmesan cheese How to: Bring a large pot of water to a boil, add some salt. Cook the pasta until al dente according to the package instructions. Drain and set aside. Season the shrimp with the lemon pepper and a pinch of salt. While the pasta is cooking, heat a skillet over medium heat and add 1 tbsp of the butter until it’s melted. Add the shrimp and cook for 2 minutes per side and remove from the pan. Cover with foil or a cover to keep warm. Wipe out the skillet and add ½ cup of water over medium high heat with the broccoli and bring to a simmer. Cover and let cook for 4 minutes. Drain the water and remove the broccoli. Cover with foil or a cover to keep warm. Wipe out the skillet. In the same skillet over medium heat add 2 tbsp of the butter, once melted add the garlic and cook for 30 seconds, stirring constantly. Add in the heavy cream and some red pepper flakes. Whisk together and let simmer for 5 minutes and stir occasionally. Add the remaining butter, some pepper and the parmesan cheese, stirring or whisking together. If it seems like it’s starting to clump, then the heat is way too high, every stove is different so adjust accordingly. Let this cook, stirring occasionally until the sauce reduces to half, about 5 minutes. Add the shrimp, pasta and broccoli into the sauce and stir until well combined. Let cool a bit, eat and enjoy! Spicy rigatoni pasta (for two): Ingredients: 2 ¾ c Rigatoni 1 Shallot minced 3 tbsp Butter 2 cloves Garlic minced Salt Pepper 1 tsp red pepper flakes ¼ c tomato paste (half a tube) 1c Heavy cream 3 tbsp Vodka ¼ c pasta water ¼ c shredded Parmigiano Reggiano (or parmesan cheese) Chopped Basil for garnish How to: Boil pasta until al dente according to package directions. Save ¼ c of the pasta water. While the pasta is cooking, melt the butter in a medium skillet over medium heat. Add the shallots and cook for 4 minutes stirring occasionally, then add the garlic and cook for about 2 minutes. Add the red pepper flakes and tomato paste to the pan. Stir until the tomato paste gets darker in color, about 3 minutes. Lower the heat to medium low and add the vodka, stir to cook off some then add the heavy cream. Bring the heat back to medium and keep stirring until the sauce is a deep orange color and thickens a bit. Add the cheese and stir. Then gradually add the pasta water while stirring. Lastly add the pasta and toss to coat with the sauce. Sprinkle chopped basil all over the pasta. Serve, eat and enjoy! I like to serve this with salad & garlic bread. Day 1/14. Heart Strawberry Cream Cheese Danish. Recipe below! I hope this series inspires you to cook at home utilizing what you already have! Strawberry cream cheese danish recipe Ingredients: 1 puff pastry sheet thawed 4 oz cream cheese softened ¼ c confectioners sugar (powdered sugar) ½ tsp vanilla extract ½ c diced strawberries Egg wash 1 egg 1 tbsp water How to: Preheat the oven to 400 degrees. In a mixing bowl add the cream cheese, sugar and vanilla extract. Mix together until smooth and well combined. Set aside. Line a baking sheet with parchment paper. Spread out the puff pastry in a single layer. Using a 3 inch heart shaped cookie cutter, cut out as many hearts as you can. If you don’t have a cookie cutter you can cut the pastry into even sized rectangles. Place on the prepared baking sheet. Take a paring knife or a smaller heart shaped cookie cutter and score a smaller heart into the puff pastry a little bit away from the border. Scoring means to cut but not all the way through, this will help the puff pastry borders rise. If you didn’t use a cookie cutter, still score the puff pastry in the rectangle shape. Spread the cream cheese mixture on the center of each heart cut out about ½ tablespoon worth, more if not using heart shaped. Then top with the strawberries keeping them in the center as well. Whisk together the egg and water. Brush the egg wash mixture on the edges of each pastry. Bake in the preheated oven for 15 minutes or until the edges are golden brown. Dust with some powdered sugar.
