Shake off any excess. This ensures the dry batter has stuck on and doesn’t come off when frying - Fill a pan with plentiful oil! - Bring the oil to medium - high heat and test its ready by adding a tiny bit of batter - Deep fry your strips in medium - high heat between 15-20 mins, flip each side half way - With ur biggest strip. Cut to check if it’s cooked and base it off that timing! - Make your spicy sauce - Cut your brioche buns in half and spread butter on the bottom halves. Sirloin Steak w/ Chimmi Churri 🌶️ Garlic & Mushroom Sauce, Garlic Roasted & Chive Mash and Steamed Green Beans 🔥 Ingredients (Serves 2): Chimmi Churri: 2tbsp Fresh Parsley 2tbsp Garlic 2/3tbsp Red Chilli 1-2tsp Fresh Oregano 1tsp Lemon Juice (or Vinegar) Salt & Pepper 3/4tbsp Olive Oil Mash Potato: 2 Large Potatoes 3 Cloves Roasted Garlic 2tsp Salt 2tsp Pepper 40g Butter 40ml Milk / Cream Handful of Chives Mushroom Sauce: 1tbsp Butter 200g Chestnut Mushrooms 2 Cloves Garlic 250ml Double Cream 1tsp Onion Powder Salt & Pepper Parsley Steak Seasoning: Sirloin Steak Salt & Pepper Pinch of Cajun 1tbsp Butter 3 Garlic Cloves (Stem of Rosemary) Steamed Green Beans Recipe: - Boil wash, peel and cut your potatoes into quarters and boil in boiling water (add 1bsp Salt) for 25 mins - Prep the Chimmi Churri by finely chopping the ingredients and adding salt and pepper, soak in olive oil and lemon juice and allow to sit - For the mash, peel some garlic and roast over the flame to char them, then chop them - Strain the potatoes and add the garlic and the rest of the ingredients and combine / roughly mash - Seive the mash for smoothness and mix with chives after - For the mushroom sauce: finely chop the mushrooms and garlic - Lightly season your steak and smash some garlic - On a skillet pan, bring the heat up with oil to a high heat (but not the max!) this will burn the steak - Once the pan is hot slowly add the steak and allow it to sear the side for 3 minutes - Flip the side and add smashed garlic and butter (and rosemary) - Tilt the pan and baste the steak with the butter continuously for 3/4 minutes - Take it off the pan and allow to rest for 5 mins! Wait until theyre are soft. - Marinade your prawns in the seasonings, add to the onion mix and cook on the low heat for 10 mins. Triple Choc Brownie Skillet🍫, topped w/ Ice Cream & Homemade Caramel Sauce 🤪 Ingredients: Brownie Batter (for 2-3 6inch Skillets, 4-6 ppl) 60g Butter 115g Chocolate (85g Dark, 30g Milk) 190g Sugar 2 Eggs 2tbsp Instant Coffee 120g All Purpose Flour 30g cocoa powder 150g Chocolate Pinch of Salt Caramel Sauce: 100g Light Brown Sugar 3tbsp Water 60g Butter 3tbsp Golden Syrup 50ml Double Cream Pinch of Salt Recipe: - Melt together the butter & chocolate shards in a microwave, or on a hob (in a bowl over boiling water) - Mix them together off the heat until fully combined - Add in your sugar and mix in thoroughly - Add the eggs in and mix in - Sift in your dry ingredients and combine, if you want a gooey fudgy brownie. Don’t bother whisking the ingredients. You want them dense - Add in as much chocolate chunks as you desire - Flatten into a skillet and top with more baking chocolate - Bake in the oven at 180-190C - For a Goey texture inside, bake for 15 - 20 mins - For a soft cake texture, bake for 35 mins - Whilst baking, in a pan add sugar water and butter in a pan - On medium heat, allow it to melt without touching it - Swirl the pan to allow the ingredients to mix - Once it starts bubbling properly, let it bubble for 10 mins and add a splash of water to prevent burning along the way - Then stir it and double check the sugars melted and has been cooking - Add your double cream (not cold!) and cook in the sauce for 3 mins - Take off the heat and allow it to cool down and thicken - Store in a container in the fridge.
