The longevity series is back - and today I’m cooking up the ultimate Longevity Salad, which helps you eat your daily serving of beans. If you didn’t already know, BEANS are the cornerstone of the Blue Zones diet, which includes a recommended ½ cup serving of beans a day. When I’m buying beans, it’s always @BushsBeans. LONGEVITY SALAD RECIPE (serves 4) . 1 bunch asparagus, chopped 1 540ml can @bushsbeans, Chick Peas drained and rinsed 6 marinated artichoke hearts, chopped 1 cup fresh dill, chopped 1 cup fresh parsley, chopped 1/4 cup pistachios, or nut of choice, chopped 1/4 cup vegan feta, optional . For the couscous: 1 cup pearl couscous 1 1/4 cup vegetable broth . For the lemon dressing: 2 lemons, juiced 1/4 cup extra virgin olive oil 1 garlic clove, minced 1 tablespoon dijon mustard 1 teaspoon fresh dill, chopped 1 teaspoon maple syrup Salt & pepper . Cook the couscous according to package directions, in vegetable broth instead of water, if desired. . Preheat the oven to 400F and get out a baking sheet. Add the asparagus and chick peas to either half of the sheet pan, and toss in olive oil if desired. Sprinkle with salt and pepper. Bake for 15 to 20 minutes, until the chick peas are slightly crispy and the asparagus is tender. . Combine all listed dressing ingredients in a measuring cup until a smooth dressing is formed. . To a bowl, add the cooked couscous, asparagus, chick peas, dill, parsley, vegan feta and pistachios. Drizzle on the lemon dressing and toss. Enjoy immediately, or store in the fridge for up to 3 days. . #Recipe #beans #longevity #salad
