Lemongrass chilli oil noodles 😋 1/2 lb ground beef 2 packs Taiwanese squiggly noodles or your preferred wheat noodles green onions, sliced thinly Sesame seeds sesame oil (optional) For the chilli oil sauce 3 tablespoons Lemongrass Chilli Oil 2 tablespoons black vinegar 2 tablespoon soy sauce 3 tablespoon sesame paste To make the chilli oil sauce: In a clean bowl add 3 tablespoon of lemongrass chilli oil, 2 tablespoon of black vinegar, 2 tablespoon of soy sauce, 3 tablespoon of sesame paste, and whisk it all together. Cook the noodles according to the directions on the package, drain, and set aside. Warm up your a large saute pan over medium-high heat and place your ground beef and garlic on the hot surface. Break up the ground meat with a wooden spoon and cook until there’s color, about 3 to 4 minutes. Add salt and pepper and give it a good mix. Drain the excess “beef juice” using a fine mesh sieve. Alternatively, you can scoot the meat to one side and tilt the pan to spoon out excess drippings. Place the meat back in the pan on the stove and add 1 tablespoon of soy sauce, 1 table spoon of black vinegar, throw in some basil leaves (as much as possible but don’t go crazy! Just enough for fragrance and color). Once the meat is cooked take it off the heat. Lay the sauce down in a bowl or a deep dish, layer the cooked noodles, scoop in the ground beef, drizzle a little bit of sesame oil (if using), and top with green onions. This is a reminder to WASH YOUR RICE Ingredients 6 stems green onions 2 ginger 2 stalks lemongrass 4 garlic cloves 1 tbsp turmeric powder (optional) 3 cups chicken stock 3 cups jasmine rice 1 tbsp New Bae seasoning (fish sauce) Directions 1. Cut 1 ginger, 3 stems green onions, 4 garlic cloves into chunks. 2. Season chicken thighs with salt pepper, 1 tbsp fish sauce & 1/2 tbsp turmeric powder 3. Wash 3 cups of jasmine rice then place it in a rice cooker & pour in 3 cups of chicken stock. Add chopped up ginger, green onions, garlic and chicken thighs into the rice cooker and wait for the rice cooker to do the rest of the job 4. Make a ginger scallion sauce by grinding up the rest of the ginger and scallion, sprinkle a little salt then pour hot neutral over it. 5. The creamiest & easiest flan recipe ever!!! 1 can evaporated milk 1 can condensed milk 8 egg yolks 1 tsp vanilla Sugar as needed for caramel 1. Melt sugar until it’s golden brown & pour it into the flan mold 2. Preheat oven to 350 degrees 3. Separate 8 egg yolks, add condensed milk, evaporated milk & vanilla together with the egg yolks 4. Strain the egg mixture through a fine strainer 3 times in order to get the smoothest texture 5. Pour the mixture into the flan mold, cover the mold with foil wrap and place the molds into a water bath 6. Place the water bath with the flan mixture in the oven for 50 minutes 7. Remove from the oven and let it cook in the fridge for an hour or overnight 8. Makes 1 ½ cups 1 cup boiling water 3 tablespoons plus 1 ½ teaspoons granulated sugar 3 tablespoons fish sauce 2 tablespoons white vinegar 2 teaspoons sambal olek 3 cloves garlic, peeled 2 birds eye chillies, minced In a heatsafe bowl whisk the sugar, fish sauce, white vinegar, sambal, and hot water together. Let the mixture sit in the fridge for 10 minutes to cool down. Add garlic and chillies to the chilled mixture, mix once more to combine it all. Always gotta have a batch of Lemongrass Chilli oil on deck 😋 4 stalks lemongrass 8 cloves garlic, peeled 5 tablespoons red pepper flakes 4 Thai chillies ½ cup Fried Shallots 4 dried chillies 4 teaspoons granulated sugar 4 tablespoons soy sauce 2 tsp new bae seasoning 2 tablespoons sesame seeds 2 cups avocado oil 2 teaspoons chicken bouillon Roughly cut the lemongrass stalk and garlic cloves then toss it into a food processor and chop until it is minced, drizzle about 2 tablespoons of oil to help break it up. Heat up 2 cups of avocado oil in a pot and bring it to 200 degrees fahrenheit. In a separate pan add the star anise, cinnamon bark, dried chillies and sesame seeds and toast on medium to release the oils and flavor, about 3 to 4 minutes. In a clean, heatproof bowl add the chopped lemongrass mixture, chili flakes, sugar, soy sauce, fried shallots, star anise, cinnamon bark, dried chillies, chicken bullion, and sesame seeds. Carefully pour the hot oil into the bowl with all the ingredients, give it a mix so everything is combined. Let the lemongrass oil cool for an hour.
