Roast salted chicken skins in the oven at 325F until crispy. 2. In a large pot, heat the olive oil and add garlic and onions. Cook until fragrant, about 5 minutes. 3. Add peppers and tomatillos, cumin, paprika, and a pinch of salt and pepper. Cook for 5 minutes, until very fragrant. 4. Add the chicken, then stir in 4 cups of broth. Simmer softly for 40 minutes. Sauté onions in a medium-heat sauce pan with butter and oil. When translucent add maple syrup and cook until deeply caramelized. 2. Deglaze with vinegar and reduce again until toasty. Deglaze again with cognac and add beef stock, thyme and bay leaves. Simmer and season. 3. Rub charred bread with garlic and butter. Top with cheese and bake until golden. 4. Ingredients: 1.5 cups bread flour 1.5 cups all-purpose flour 1/4 cups sugar 1/2 tsp kosher salt 2.5 tsp instant yeast (1 package) 3/4 cup Ontario milk 110 degrees F 3 tbsp Ontario butter 1 egg Filling: 3 tbsp Ontario butter, room temperature 1 tbsp cinnamon 1/4 brown sugar Icing: 1 cup icing sugar 1/2 tsp vanilla 2 tbsp maple syrup 1 tbsp Ontario milk Method: For the Dough: Mix all the dry ingredients in your mixer bowl. Melt the butter in warm milk and add yeast. Let sit for 5 minutes and slowly to dry ingredients. Add egg and mix until the dough becomes smooth. Transfer into a greased bowl, cover and let rest for 10-15 minutes. Preheat oven to 375F Stretch dough out thin as possible with a rolling pin. Cut into 3 inch strips. Filling: Mix all the ingredients together and spread over dough. Roll up the dough and cut into tiny pieces. Place on a lined baking tray. Baking: Bake for about 18 minutes or until golden brown. Melt the chocolate and butter in a double boiler, remove and add egg yolks. 2. Whisk the egg whites in a mixing and add sugar slowly in stages. Finish with cream of tartar. Gently fold the two together. 3. Grease up your ramekin with butter and coat with sugar. Softly add your mixture. 4. Bake at 400F until you get a nice rise and a small crust on top. Season the breadcrumbs with salt, pepper, oregano and pecorino. 2. Lay the veal chop on a sheet of plastic wrap; drizzle with olive oil. Top with second sheet of plastic wrap. Bang it out with a meat mallet or rolling pin to a 1/4 of an inch. 3. Dredge in flour, then egg wash and finally the breadcrumb mixture. Let sit for a minimum of 3 minutes. 4. Bring your pan with oil up to medium heat and add your butter. 5. When foaming, add your breaded veal. 6. Cook on the first side until golden, about 3- 4 minutes then flip. 7. Serves: 2 Prep time: 5 minutes Cook time: 9 minutes Special tools: Charcoal Grill Ingredients: Burger Buns 3 tbsp warm whole milk, 110F Millers Dairy 1 cup warm water, 110F 2 ¼ tsp (1 packet, 8 grams) instant yeast 2 ½ tbsp granulated sugar 1 large egg @Nicholyn Farms at room temperature, beaten slightly 3 cups K2 Milling bread flour 1/2 cup K2 Milling all-purpose flour 1 ½ tsp fine salt 3 tbsp unsalted butter, at room temperature Swiss Mushroom Burger 2 cups cremini Cookstown Greens, sliced 2 shallots Cookstown Greens, sliced 1 clove garlic Nicholyn Farms, sliced 1 nub butter 1 tsp EVOO 4 3 oz patties (ground pork from Nicholyn Farms, ground beef from Thorganic Farms 1 tsp Lowery’s 4 slices of Swiss cheese 2 burger buns, toasted Method: For the Burger Buns: 1. You'll want to quiche the cook with one bite of this Leek and Asparagus Quiche made with local Ontario dairy staples in our fridge. 🧀 🥛 Serves: 6-10 Prep time: 14 minutes Bake time: 45 minutes Rest time: 35 minutes Special tools: cake pan, food processor and strainer Dough: 2 1/4 cups all-purpose flour 3/4 cup butter, diced and very cold 1 pinch kosher salt 6 tablespoons ice cold water Filling: 1 cup Ontario milk 1/2 cup Ontario heavy cream 35% 1 leek-washed, sliced 1 big nub Ontario butter 2 cups Ontario cheddar, grated 3/4 cup Ontario mascarpone 10 eggs 1 bunch of asparagus, ends removed and sliced 1/2 cup fresh dill, torn 1 kosher salt, to taste 3 twists of black pepper, to taste Method: 1. Pulse dough into a confetti-like texture. Dump it onto the counter and work it into a dough. Slap it twice and chill to rest for 30 minutes. 2. Pass eggs through a strainer for ultimate smoothness. Add Ontario milk, cream and season. 3. Roll out your dough between two sheets of parchment paper. Place into butter-lined spring form cake pan. 4. Sauté leeks in Ontario butter until soft and add asparagus, cheddar and dill to the cake pan. Toss and fill with egg mixture. Garnish with mascarpone and back pepper. 5. Bake at 375F for 45 minutes.
