Place freshly grated potatoes into water and give an aggressive stir to wash off the starch. 2. Place into a bar cloth and squeeze all the liquid out (like really squeezing, moisture is the enemy!). Now place onto a paper towel and continue to dry them out. 3. Toss into a bowl, add butter and season. Place the pan on medium heat and add half the potato mixture. Tuck in the edges and turn the heat down to medium-low, top with ham and cheese. 4. Add the remaining potato and when the edges start to crisp, give the beauty a flip and continue your cooking for another 6-7 minutes until golden on the outside and creamy on the inside. 5. Roast salted chicken skins in the oven at 325F until crispy. 2. In a large pot, heat the olive oil and add garlic and onions. Cook until fragrant, about 5 minutes. 3. Add peppers and tomatillos, cumin, paprika, and a pinch of salt and pepper. Cook for 5 minutes, until very fragrant. 4. Add the chicken, then stir in 4 cups of broth. Simmer softly for 40 minutes. Pull the chicken out and remove the bones. 5. Add chicken back in and white beans. 6. Remove from the heat and stir in the cilantro. If needed, thin it with additional broth and lime juice. 7. Ladle the chili into bowls. 8. In a sauce pan, sauté veggies and tomato paste with butter. 2. Add the lobster and a cup of stock. Steam with the lid on for 8 minutes. Remove the lobster and break down. Chop up the tail and knuckles, reserving the claws. 2. Retail the shells and add a cup of stock. Cook down and strain. Add butter and claws for garnish. Risotto: 1. Melt the butter with shallots until translucent. 2. Toast the rice and deglaze with wine. Add stock one ladle ant a time and stir until almost cooked 14 minutes. 3. Add the mascarpone, lobster and parmigiana. 4. Toss, season with lemon and plate. Should be a little loose and fluffy. For Serving: 1. Plate the risotto and tob with lobster bisque and claw. 2. Roast bones at 400F degrees until lightly tanned. Add veggies and pain with tomato paste. Roast again until toasted. 2. Add bones to a large stock pot. Deglaze the pan with red wine and add to the pot. 3. Simmer softy and continue to top with water for 12 hours. 4. Strain and chill. 5. Skim off the fat and use it anywhere to make everything better.
