Kung Pao Chicken My take on a classic stir fry dish that’s done in about 20 minutes from start to end. If you are cooking with a non stick wok/pan you can skip the poaching step and instead stir fry the chicken followed by adding in the sauce and reducing. Ingredients Chicken Breast 350g (Diced) Chinese Wine 1 Tbs Water 1 Tbs Potato Starch 1 Tbs Salt Pinch Ginger 35g Garlic 6 Cloves Dried Chilli 4 pcs Red Onion 1 pc Spring Onion 2 Sprig Sauce Dark Soy Sauce 1.5 Tbs Oyster Sauce 1 Tbs Soy Sauce 1 Tbs Sugar 1 Pinch 1. Marinate chicken breast in water, wine, starch and salt for 5 minutes 2. Premix sauce ingredients in a small bowl 3. Poach marinated chicken in vegetable oil for 3 mins at approximately 150 deg.c 4. Strain chicken and remove oil from wok 5. To a clean wok, add two table spoons of oil 6. Saute ginger, garlic and onions till lightly brown 7. Add dried chilli followed by chicken 8. Tartiflette Learnt about this dish back when I was an intern working in the middle of nowhere in France. Its a dish commonly eaten during the winter month in the mountains as a way to warm you and your soul. Ingredients Onion 1 Pc Bacon 150g Potato 3 Large (800g) Olive Oil 2 Tbs Cream 80g Salt to taste Reblochon cheese/ Camembert Cheese 400g Thyme 3 Sprigs 1. Boil potatoes in water for 10 minutes or untill half cooked 2. Saute bacon and onions in olive oil until brown 3. Strain and add potatoes into the pan 4. Add cream and season with salt 5. Braised Beef Short Ribs Ingredients Beef Short Ribs 3kg (3 Ribs) Oil 3 Tbs Celery 2 Stalks Carrot 1 Pc Onion 1 Pc Brown Button Mushroom 200g Tomato Paste 2 tbs Flour 1 Tbs Red Wine 1/2 Bottle Water enough to cover ingredients Salt to taste Bouquet Garni Leek Leaf 1 Pc Rosemary 1 Sprig Thyme 1 Sprig Flat Leaf Parsley 1 Sprig Bay Leaf 1 Pc Polenta Polenta 100g Chicken Stock 500g Salt to taste Butter 40g Steps 1. Sear beef in pot with oil until brown on all sides 2. Remove beef from pot and sauté vegetables until brown 3. Add tomato paste, cook for 1 minute followed by flour and cook for an additional minute 4. Add beef back into pot and deglaze with red wine 5. Reduce by half, add water, bouquet garni and salt 6. Braise in 180deg.c oven for 4-6 hours until tender and falling apart 7. Cook polenta by adding it into hot chicken stock and stirring for 5 minutes 8. Season with salt and finish with butter 9. Lobster Mac & Cheese made using Panasonic NU-SC280 Cubie Oven, steam and bake function & Prime+ EDITION Fridge, NR-YW590. Try the recipe now and share with me in the comments below! Ingredients Lobster Tail 2pc Plain Flour 20g Butter, unsalted 20g Milk 300g Cheddar (for sauce) 1cup Mirin 20g Whiskey 20g Salt to taste Macaroni 200g Cheddar (to top) 1/4cup Spring Onion, chopped 1/4cup Directions: 1. Using the steam (high mode), steam lobster tails for 6mins 2. Cool the steamed lobster tails down quickly by using the prime freeze function for 5mins, deshell and dice the lobster, reserve the steaming juices 3. Make a roux by cooking butter and flour together, whisk to combine and add in milk, bring to a boil 4. Pour the steaming juices into the sauce, add mirin and whiskey (optional), season with salt to taste, add in 1cup of cheddar and combine well 5. In a pot of boiling water, undercook the macaroni from the packaging time by 2mins, strain and transfer the macaroni into a mixing bowl 6. Add the sauce, spring onion and diced lobster into the mixing bowl, mix all together well 7. Transfer to desired tray, cover the top with 1/4cup cheddar, bake at 250deg.c for 20mins 8. Steak Donabe l Steak Claypot Rice Wagyu beef dinner for two pax in under $30 If you can’t get the exact ingredients that I’m using, feel free to change it with similar ingredients such as using an Angus steak instead of wagyu or a regular Japanese soy sauce. My version of boy dinner. Have been eating a variation of this for the past two months for dinner about 2-4 times a week as I’m on a cut. The basics are approximately 250-300g of meat accompanied by 200g of salad. This fills me up super well without the need to consume any starch. And keeps me full till about noon the next day. This is also my main meal for the day where I usually only have a snack + a protein shake around noon of each day.
