Three years and many pesto pastas later this has become one of our most special dishes! 👩🏻‍🍳 INGREDIENTS 👩🏻‍🍳 2 lb of chicken breast Half a box of spaghetti 1/2 tbsp each of seasoning Cajun Seasoning Grilled Poultry Seasoning Italian Herb Seasoning Adobo Seasoning 1/2 cup of basil 1/3 cup pine nuts 2-3 sprigs of mint (pluck off the leaves) juice of half a lemon 1 cup of packed spinach Half a container of button brown mushrooms a splash of cream (roughly 2 tbsp) 1/4 cup freshly grated parmesan ✨ COOKING INSTRUCTIONS ✨ Boil your pasta according to instructions on the package. Any pasta shape works; I happened to use spaghetti! Blend together basil, spinach, pine nuts, mint, cheese, and a squeeze of lemon. Season your chicken and sear for 5-7 minutes on each side, or until the internal temperature is at least 165 degrees. Remove the chicken from the pan, but save the drippings in the pan. Let the chicken rest for at least 5-10 minutes before cutting it into 1-2 inch strips. In the same pan, deglaze with a bit of water and add your mushrooms. Saute for 2-3 minutes, and then remove. Add the pesto to the pan, and a bit of cream, and stir for 30 seconds. Add your pasta and combine it with the sauce. Next, add your mushrooms, and your chicken on top. Top with more parmesan, and then serve! #cooking #safeway #albertsons #food
