Back at it again! 👩🏻‍🍳 On this night I prepped some spicy everything but the bagel guacamole. The sundry tomato spread was a hit the last time I made it so I went ahead and whipped up another batch. Dinner was nutrient dense but on the lighter side since it was pretty late in the night. For the starter I made an immunity boosting green puree soup with a chicken bone broth base. Hello friends! Another day of doing what I love. ❤️ Today was a very easy day since I didn’t have to prep so much. As shown in the video I prepared some roasted Brussels sprouts, pan seared chicken thighs & a dairy free nut based “ricotta”. I put those away in the fridge and started working on dinner. For the appetizer I prepared a simple mixed green salad with some avocado, red onion, & toasted pine nuts with a lemon vinaigrette. The entree were pan seared scallops in a lemon, garlic & butter sauce over a garlic and rosemary parsnip mash with a side of broccolini. Hello friends! Tonight instead of cooking for my clients I was cooking for myself as well as my bf. For dinner I prepared pan seared lamb chops that I let marinate in Worcestershire sauce, olive oil, lemon juice, fresh oregano, garlic, salt and black pepper. I paired that with a side of lemon potatoes that I baked in the oven and a Maroulosalata which is a geek salad with lettuce, dill, green onions, feta cheese, olive oil and lemon juice. Another successful night of cooking 👩🏻‍🍳 It was fajita night at my clients which is one of their favorite nights so I try to make this at least once a week. Another day of private chefin. 👩🏻‍🍳 On this day I restocked the fridge with some cooked chicken thighs and focused on dinner since my clients had a guest over. As a starter I prepared a simple spinach salad with corn, cilantro, radishes, sprouts, avocado & a lime honey vinaigrette. On this night I forgot my apron along with many of my other cooking equipment. 🤦🏻‍♀️ ( I was embarrassed) I had to improvise and thankfully everything went as planned. It was game night which meant very late dinner. For the entree I prepared something I’ve made for my clients and his wife before that they really enjoyed. A steamed halibut topped with capers, red onion, thyme and a high quality olive oil over a carrot puree with a side of garlic green beans. The appetizer was a bone broth cream of broccoli soup which is another food item they loved the last time I prepared it. Made some delicious steak tacos for the superbowl last night along with a very spicy jalapeño, Serrano and habanero pepper hot sauce, guacamole and an avocado crema. 🥑 For the appetizer I made the Kris Jenner avocado dip. Happy to be back after a long holiday break. 😁 This was actually my second day back, first day back consistent of restocking the fridge / pantry. I also prepped some chicken, snacks & salad dressing/ spreads to last a few days. On the second day as seen in this video, I prepared another spread. Hi friends! 😊 Today was my first day back after my 3 day break. I wanted to make something special for my clients on this night. They love thai food so I went ahead and prepared a Thai papaya salad as the starter which they LOVED! ✨ For the entree I cooked up a Thai red coconut curry with chicken & vegetable with a side of jasmine rice. For the dessert I made one of their favorites, a chocolate molten lava cake with some powdered sugar. Hi friends! 😊 Here’s what I made for my clients for dinner on this night. My clients enjoy trying all kinds of different foods so I decided to share some dishes I grew up eating in my Dominican household. For the appetizer I prepared a shrimp ceviche that included red onion, bell peppers, jalapeño, habanero peppers, cilantro and lime juice. I served it with a few cassava flour tortilla chips. They absolutely love it! The entree was one of my favorite dishes growing up. Dominican Pollo guisado. I served it was mashed green plantains instead of rice and a side of a purple cabbage cilantro and lime salad. This was another hit, they really enjoyed all of the rich flavors. Hello friends. I’m currently on a little week break from cooking for my clients and decided to share the recipe for Caesar salad that I’ve made for them a few times and loved. ✨ Sometimes I make this salad with the traditional Romain lettuce, as lately I’ve been using radicchio since it’s in season and love the bitterness it’s has. I also usually top this salad with roasted chickpeas in place of croutons. I season them with garlic powder, onion powder, turmeric, sea salt, black pepper and olive oil. I didn’t make any today for my salad out of laziness.
