HOMEMADE NO-KNEAD BREAD 🍞🤤 .. what i put on it at the end cant be beaten! Soooo easy & so satisfying! 1. Mix together 500g bread/all purpose flour, 2% salt (10g), 8g instant yeast & 375ml warm water 2. Leave that to chill out with a tea towel over the top for 20 mins 3. Then we want to fold the dough in the bowl. Go from bottom to top with a wet hand.. this is to develop gluten, it should eventually form into a tight ball 4. Then cover & leave for 90-120 mins 5. It should have risen considerably. Down flour your work surface and tip out your dough 6. Now we want to letter fold, think of the dough like a clock - 6->12 and keep spinning the dough around until you’ve gone around the clock twice 7. Now add to a floured proofing basket or tea towel in a bowl for about an hour to rise a little more and find its shape 8. Meanwhile ore heat your oven to about 220 degrees c, but you can go hotter and add your dish/pizza stone/dutch oven 9. Then add your dough in seem side up (so it splits open nicely) and wack in for 25 mins with the cover & 15 mins or so without the cover (keep an eye on browning) 10. Take it out and let it cool for 30 mins and ENJOY!!! 11. This same recipe can make pizza dough, baguettes, focaccia and more. HOMEMADE MAYONNAISE 🔥 So easy, and so banging Apolgogies for the messy counter top, was making cinnamon buns 🤤 - 1 egg - pinch of salt salty flavours & pepper - 220ml neutral oil (olive oil works but does have a taste) - 1 tbsp dijon mustard - lemon juice (or white wine vinegar) - blend it! Will last for around a week!👌🏻
HOMEMADE CHICKEN SOUP 🔥🐓 Sooo easy & such a banger. Great for using up the leftover chicken bones and any veg in the fridge! Chicken Stock: 1. Fry/roast your bones until browned and then add sliced onions, celery, carrots with water & thyme, garlic, bay leaves & parsley - bring to boil & then leave to simmer from anywhere between 4-24 hours (i did overnight) 2. Run through a sieve and remove the herbs, veggies & skim off the fat Chicken Soup: 1. Fry off your veggies (i went for onion, carrots, leak - but add whatever you have!) - you can add more garlic, thyme, salt, pepper here too! 2. Add your leftover chicken or add some fresh chicken - with some sweetcorn too! Brown off 3. Add your stock and bring to boil, making sure you add plenty of salt to really pull out those flavours! 4. Add half the mix to the blender - you can add cream here if you want it creamy! And blend - then add back and skim off the foam 5. Add back to the heat and add a few noodle nests and cook through 6. Serve with plenty of bread & butter & top with parsley, croutons, pepper, cream and oil if you wish!!🔥🔥👊🏻 #chickenstock #chickensoup

Lazy Dirty Nachos 🔥👌🏻 Super easy, done in less than 20 mins 1. 15% beef mince into a hot oiled pan with salt, pepper, garlic, chilli powder, coriander & cumin - fry off for a few mins 2. Stick half the bag of plain tortilla chips into a baking dish, top with half the mince, half the salsa, half the refried beans & add another layer on top 3. Top with lots if grated cheese & stick in a hot oven for 5-10 mins 4. Mash some avocado with salt, pepper & lime juice 5. Take it out and top with soured cream/yogurt/creme fraiche, coriander, avocado and enjoy!!!
FULLY LOADED BREAKFAST BUNS 🔥🍳🥓🍔 These were so banging & sooo simple 1. Slice up your onion and fry off until golden brown with oil, salt, pepper, sugar 2. Move over your onions & cook your bacon until crispy 3. Remove everything and add in your eggs and fry them off! 4. Remove the eggs & toast the buns with some mayo or butter! 5. Remove the buns, add some honey & chilli to the pan for a few seconds to heat up and then slap that all over the buns and stack it all up and ENJOY!!🔥❤️

ROASTED TOMATO SOUP WITH GRILLED CHEESE 🍅🥣🥪 This is insane, so easy and warrrrrrrrming - grab loads of tomatoes and chop them up - quarter an onion - add to a roasting tray with oil, salt, pepper, garlic bullb and some herbs (basil, rosemary, thyme, oregano) - roast for 20 mins at 200c - add to a big pot with water/veggie stock, cream & more salt and pepper if needed plus some fresh basil and blend!! - back on the heat - mayo or butter on the outside of the bread, cheese inside and slap into a pan and get melted and crispy! - serve the soup with some olive oil, pepper & fresh basil - ENJOY 🔥 #soupseason #tomatosoup #roastedtomatosoup #winterwarmers
Creamy & healthy 1-pot pasta for the family 🔥🤤 1. Squeeze out your sausage meat and fry it off for a few mins until cooked through & then set it aside whilst getting your pasta on the go 2. Chop your veg and then stick it in the pan, and deglaze the pan with some pasta water and pull out all of those flavours 3. Add salt, pepper & mixed herbs (garlic would be great too) and then mix in some creme fraiche along with your pasta & sausage meat 4. BRAISED BEEF SHORT RIBS 🥩 🤤 - for the family!! So simple yet soooooo delicious and effective - next time im going to really reduce down the gravy into more of a glaze 1. Dry off & salt up your short ribs, ideally fridge them overnight 2. Sear them off in a super hot pan 3. Remove & add carrots, celery & onion along with with garlic, thyme, rosemary, bay leaves, red wine & beef stock 4. Add the short ribs back, they should be 2/3 covered & stick the lid on, bang in the oven at 100 degrees C for 4-6 hours - enough time for the collagen in the meat to turn to gelatin! 5. Remove the meat and the bay leaves - either remove the veg and then reduce the gravy right down or boend it up and thicken with cornstarch or bisto! 6. SIMPLE CHICKEN STOCK 🐓🍗 The best way of pulling out all of the flavours and respecting the whole bird! - remove all your meat from the bones - brown your bones in a big stock pot - then add carrot, celery & onion - rosemary, thyme, parsley, bay leaf, peppercorns (you can add salt if you want) - lots of water & simmer on low for 4-6 hours! - skim off the fat and scum - keep in the fridge for a week or freezer for a few months 🔥
LOW CAL CREAMY SAUSAGE PASTA 🔥🤤 This is sooo very class & done in 20 mins 1. Get your pasta on the go in super salty water 2. Chop up all of your veg, use whatever but an onion or shallot is great for a base 3. Oil in the pan, squeeze out your sausage meat, fry off for a few mins with salt and pepper and put to one side 4. Oil in the pan with shallots, then add white wine and scrape off the bottom bits of sausage on the pan and leave for a few mins.. add some garli, salt pepper 5. Add your yogurt to a bowl with a tsp cornflour to stop it from curdling 6. Then add your veg and sausage back with pasta water, yogurt and pasta 7. Grate in loads of parmesan and turn the heat off and squeeze in half a lemon 8. Plate up, add more parmesan and basil! ENJOY 🔥👌🏻
Smoky chipotle chicken & halloumi wraps 🔥 - slice up your chicken breast and then marinade in a few teaspoons of smoky chipotle chilli paste - slice an halloumi, onion, pepper & mushrooms - stick the chicken into a pan and cook theough for a few mins - then add your onions for a few mins with some salt & pepper, then add your halloumi, pepper & mushrooms fry off and then add your chicken back and bring the heat down - make an wasy guac with smashed avo, diced tomatoes, lime juice & then red onion and coriander if you have it - toast your wraps - add yogurt, then your mix, avo, top with your guac and other bits in the fridge like pickled red onions!!! ENJOY
STICKY CINNAMON BUNS 🥮🤫 1st attempt at these, few things i needed to change from what I think watching back: - spread butter on the dough and sprinkle cinnamon sugar on top, way easier than spreading - go long and thin with the dough for bigger thicker buns - go about 5-10 mins less in the oven - put leas in the tin so you give them room to rise a little more when proofing - make more of a buttercream icing as this bangs hard - flour/oil the bowls when rising so it doesnt stick!! Recipe: 1. Mix 156g whole milk, 256g eggs, 180g soft butter72g sugar, 6g yeast together and then add 600g flour and 12g salt on top and combine 2. Leave to rest for 20 mins then knead for 5-10 mins until tight and smooth on a floured work surface 3. Then let rise in the bowl for 1-2 hours or overnight in the fridge 4. Then roll out into a rectangle and cover with 110g soft butter, 250g brown sugar, 15g cinnamon, 1 tbsp vanilla 5. Roll it up and cut into rolls and wack into a non stick baking tin with space between each and leave to proof for 1-2 hours 6. Bake at 190-200c for around 30 mins but keep an eye! 7. Cover in icing sugar or butter cream and enjoy! #cinnamonbuns
