Chicken wraps - obvs from scratch, in 20 mins FOR THE FAMILY 🔥 1. Mix flour and hot water with salt, olive oil & a pinch of bicarbonate soda - we want the tough to be able to be shaped into a nice ball - not too sticky & not too dry - leave this to rest for 10 mins 2. Now slice up your chicken breast (scissors are class) and add mayo, garlic, paprika (everything salt is something you wont have… yet 🙄) but also coriander & cumin will be great 3. Slice up your veggies 4. Portion your dough into 4 or however many you want, then roll out onto a floured work surface and then stack up and leave to chill out 5. Get a pan on the heat and brown off your chicken for a few mins, add your onions with more seasonings and then peppers are the end - keep them crunchy 6. Toast your wraps on a hot plate or pan on medium heat for a few mins each side - keep them soft not crispy 7. Now layer up, yogurt, meat n veggies, more salad bits, chimmichurri or other sauce, sauerkraut, pickled red onions, sesame seeds & coriander - ENJOY 🔥🔥 #familymeals #quickrecipe #dinneridea #fromscratch

Fom scratch ep 19: MOZZARELLA 🔥👌🏻 For this you need non homogenized and non ultra pasteurised milk - i got some from Waitrose - raw milk is ideal, your local farmshop should have some quality stuff! 1. Heat 4 pints of milk up to around 40 degrees or like warm bath water 2. Then take off the heat and add around 120ml/g of distilled vinegar (white wine vinegar should work too) 3. Then mix for 30 seconds and add your lid then leave for 15-20 mins to curdle 4. Now grab a sieve or cheesecloth and a bowl to separate the curds from the whey 5. Now squeeze your curds and remove all the whey 6. Now heat in the microwave for about 30 seconds or oven until its hot and can be stretched and folded 7. Grab a spatula and stretch and fold the cheese (like dough) for about a minute 8. Then add to very cold water for around 10 mins to really solidify! 9. Then will keep for a few days in the fridge, enjoy on pizza and toasties!!!🔥🔥 #fromscratch #mozzarella #homemademozzarella

The simplest no-knead bread recipe there is! I went for 80% hydration to test, but since this ive done a 70% and it was a little easier to work with! Play around but a standard recipe ive used many times is below: 1. Mix together 500g bread/all purpose flour, 2% salt (10g), 8g instant yeast & 375ml warm water 2. Leave that to chill out with a tea towel over the top for 20 mins 3. Then we want to fold the dough in the bowl. Go from bottom to top with a wet hand.. this is to develop gluten, it should eventually form into a tight ball 4. Then cover & leave for 90-120 mins 5. It should have risen considerably. Down flour your work surface and tip out your dough 6. Now we want to letter fold, think of the dough like a clock - 6->12 and keep spinning the dough around until you’ve gone around the clock twice 7. Now add to a floured proofing basket or tea towel in a bowl for about an hour to rise a little more and find its shape 8. Meanwhile heat your oven to about 220 degrees c, but you can go hotter and add your dish/pizza stone/dutch oven 9. Then add your dough in seem side up (so it splits open nicely) and wack in for 25 mins with the cover & 15 mins or so without the cover (keep an eye on browning) 10. Take it out and let it cool for 30 mins and ENJOY!!! 11. This same recipe can make pizza dough, baguettes, focaccia and more. Plus you can use leas yeast and leave it to overnight if you want!!🔥🔥 #nokneadbread #homemadebread

Is this @spudman approved?😆 Cant beat the OG, but if you have loads of bits you can chuck in with some tuna, go for it, basically anythibg works well! 1. Add your potatoes to a tray with plenty of salt underneath, add to a super hot oven for about an hour (i needed about another 10 mins tbh) 2. Now mix tuna with salt, pepper, chilli, garlic, dijon, pickles, pickle juice, sweetcorn, mayo, yogurt, lemon zest & juice, red onion, celery, olive oil, parmesan, spring onion - sorted 3. Spuds out, butter then up, cheddar on, tuna on, cheddar on, top with pepper, more spring onions, parsley and a little side salad for more volume! #jacketpotato #spudtok #spudman #healthydinner #easydinner

Breakfast for the pregnant missus… or me?🤣🤫 Its not my fault shes fussy and doesnt like anything 🤣🤣 In any case, recipe below: 1. For the hollaindaise add 1-2 yolks to a bowl with a squeeze of lemon juice, dash of white vinegar, salt & pepper. 2. Get this over a pot of lightly simmering water (not too hot, dont cook the yolk) - whisk and add butter, melt this in and you’re done. If the wgg cooks, you have to do it again - if it splits, add a drop of hot water! 3. Now add your eggs to a sieve, drain off the excess watery white & add to a slightly stirred pot of simmering water for 2-3 mins 4. Then toast up your bread or muffins 5. From scratch ep 20: my SPAGHETTI BOLOGNESE 🔥 Or course this isnt authentic, of course its not the classic recipe - but its mine & i like it a lot 1. Dice up whatever veggies you fancy but i like the classic carrots, onion & celery 2. Add these to a hot pan with salt, pepper & either dried or fresh garlic, thyme & oregano - i would normally now add the tomato puree and cook this off 3. Now add your mince, i like a lean steak mince as its effective with calories, flavour and protein! Cook this through on a high heat 4. Add a can of chopped tomatoes or passata, lashings of Worcestershire sauce, beef stock & olives - leave to simmer whilst you do the pasta - keep it quite thick 5. Add your pasta to salted pasta water and then use a bit of that liquid in your bolognese! 6. Plate up, drain your pasta and run it through cold water to wash the starch and stop it sticking 7. From scratch ep 18: BAGELS 🥯 So class & so tasty to make from scratch 1. Combine 500g bread flour (all purpose is fine), 10g instant yeast, 10g salty salty flavours, 25g sugar & 300ml warm water 2. Now knead for 10 mins until you have a smooth tight ball 3. YOU CAN SKIP THIS STEP - now if you want more flavour, oil a bowl and add your dough into it, cover with a tea towel and leave in a warm spot until doubled in size (1-2 hours) 4. Then divide your dough into 8 equal pieces and either roll into balls and make a hole theough or make a sausage and pinch together around your knuckles - then place in a baking dish on baking paper for 30 mins 5. Bring a big pot of water to boil, add a big handful of sugar or honey or maple syrup with some salry salry flavours & place in your bagels cooking them 1-2 mins one side and then flipping them to do the same on the other 6. Back onto the baking dish we brush with an egg wash and top with your favourite everything seasoning & some extra black sesame seeds! 7. Then bake at 220 degrees C for 25-35 mins 8. One-pan FLAVOURFUL chicken, rice & broccoli 🔥 1. Add your chicken breasts to a bowl with oil, salt, pepper, paprika, oregano, cumin & coriander - leave to get flavoury 2. Then slice up whatever veggies you’re using - i went with red onion, broccoli & mushrooms - plus chorizo if you fancy it! 3. Add your chicken to a hot pan and get some nice colour but dont cook through 4. Remove the chicken & add your onion and chorizo with the same spices on the chicken! 5. Add the rest of your veggies and your rice get some colour then deglaze the pan with a dash of chicken stock - then add your chicken, lid on and on a lower heat or in the oven for 10-20 mins until the rice is cooked 6. Restaurant style NACHO CHEESE 🔥🧀 The secrent ingredient of sodium citrate is the answer! I literally just got a pot on amazon, it essentially locks up the calcium and allows the casein to run freely - meaning its thick and creamy!! 1. Grate cheddar cheese and make aure you weigh it 2. Use around half of that weight in milk (but add more if you need to) 3. Then we want 3% of the cheese weight in sodium citrate into the milk on the heat 4. Upgrade those chicked wraps!🔥🔥 1. Slice up your chicken and season with your favourite mix and some oil - leave this for at least 20 mins or overnight in the fridge to get FLAVOURY 2. Make your wrap dough, just go by eye because then youre more likely to keep doing it. Boil the kettle and just let it calm down, then add it to your flour and salt - we want to mix it into a ball that isnt too wet but also not too dry, go by feeling (i do have a recipe in the from scratch series for these but i prefer by eye)… then knead for a few mins to develop some gluten and leave it to chill out 3. Add your chicken to the pan with veggies like onions and peppers and cook through for about 10 mins 4. Then grab a ball of dough, grab a rolling pin or bottle and roll out your dough into wraps on a floured work surface 5. Then add then to a hot frying pan or hot plate to get some nice colour! 6. Now layer up your wraps, yogurt down, some cucumber and tomatoes, your chicken n veggies, pickled cabbage if you have it, coriander and sweet chilli sauce (really just whatever you want) 7. Stevie Snacks ep 5: “ICE-CREAM” Obviously this isnt actual ice cream, more of a smoothie bowl (usually its a lot thicker) .. but its a great healthier alternative for her to have and she loves it! 1. Ideally all frozen fruit as this keep it all thick - but we had what we had! Cherries, strawberries, blueberries, banana & raspberries go in 2. From Scratch ep 23: ENGLISH MUFFINS 🤤 These are so so so class and so so so simple! 1. Mix 350g bread flour, 190ml warm milk, 6g salt, 15g sugar, 4g instant yeast, 15g soft butter & 1 egg - then cover and leave to rest for 30 mins 2. Now punch out the air, add some oil and stretch and fold a gew times around the clock. Pull into a ball and add back to the bowl for an hour to double in size 3. Now tip out onto a floured or semolina worktop and flatten out to about 2cm thick with your hands - then grab some round pastry ring and cut out your muffins - with the excess dough, roll it back up, flatten it and then repeat until used 4. Cover your shaped dough for another 30-60 mins to double up in size again 5. Get a pan on medium heat and then start stacking them up in the pan and brown off a few mins each side 6. Leave to cool, toast and ENJOY! Make sure you freeze them as theyll last for months and defrost in no time!🔥 #fromscratch #englishmuffins #englishmuffinrecipe #baking #homebaking

Victoria Sponge with Stevie - what could go wrong?🤣 🍰 1. Mix 200g soft butter with 200g caster sugar & then slowly add 4 eggs 2. Then we want to add 200g self raising flour with a tsp of baking powder & a little dash of milk 3. Add this to either 2 buttered sandwich tins or one big tin - then bake at 150/160 degrees C - 20 mins if you use the sandwich tins or 50 mins in a big tin 4. Mix 300g frozen raspberries or strawberries with 150g sugar (half brown, half white - i went half the sugar than usual) - bring this to boil then ideally add a pack of pectin but if you dont have it like me, just add the juice from a lemon then leave to cool fully 5. Now mix 100g soft butter with 150-200g icing sugar, vanilla extract and a drop of milk 6. Now let the cake fully cool and remove from the tin. Then slice in half if you did a big tin. Then add the buttercream to one side & the jam to the other - then carefully add the top back and dust with icing sugar 7. ENJOYYYYY 🔥🔥 #victoriasponge #baking #bakingwithtoddler #fromscratch

From scratch ep 16: raspberry, strawberry & blueberry jam 🔥 Super simple yet super effective!! 1. Mix 350g frozen berries with 350g sugar… (i like 2/3 white, 1/3 brown) 2. If you leave this to macerate in the fridge overnight or for a few hours it can be more flavourful 3. Then stick it into a pan and bring to a boil, then take it off the heat and add half a packet of pectin and the juice from half a lemon (You can used a potato masher to mash down any big bits of fruit - and you can use a sieve to get out the seeds if you dont like - but i like!) 4. We need to ensure the jars we use are sterilised in an oven at 100 degrees C for at least 5-10 mins (and give them a wash before) - these jars should be airtight - i always use kilners! 5. Cool completely and then stick in the fridge for a month or keep in the cupboard sealed for months and a few weeks opened! 6. Slap it on everything and enjoy!!!🔥🔥 #jam #fromscratch #homemadejam
