Sometimes the simple meals are the most satisfying! The trick to keeping this salad fresh all weekend is using some crunchier veggies like shaved cabbage and keeping a towel at the bottom of the bowl to keep it fresh. Shwarma spice blends are easy to find at middleeastern markets or online but I have a diy version within my cookbook as well. And amba is great. 2 1/2 cups cauliflower rice frozen or raw, or 1 12-16oz. Bag cauliflower rice 
1/3 cup Franks Hot Sauce
1/3 cup plain Greek or dairy free yogurt (I used the nondairy plain yogurt from sprouts brand) 
1/2 cup chopped white onion
1/4-1/3 cup diced green chilies (depending on spice tolerance)
additional buffalo , sauce, yogurt and chopped scallions/green onions for garnish (optional) 3 tbsp. Nutritional yeast, 1/2 tsp. Garlic powder, 1/2 tsp salt, 1/4 tsp pepper Carrot chips or bean-based tortilla chips for serving. Heat a skillet and coat with oil spray. Brown the ground chicken til mostly cooked, about 5-7 minutes. It’s okay if it’s not fully cooked just yet because it will bake again. Preheat oven to 350°F. In 1 large mixing bowl add the chicken and remaining ingredients and mix well. Pour into a baking dish and bake uncovered for 30 minutes. ENJOY!!! INGREDIENTS 1.5 cups blanched fine almond flour large handful of baby spinach 1 egg pinch salt METHOD preheat oven to 350F & Blend spinach and egg until smooth, if needed add a small splash of water to help blend. - just a splash, you don't want it too wet! Combine all ingredients in a large bowl. See video Add your dough to a silicone baking mat. cover with parchment and roll to 1/8 inch thickness. Cut into your desired shape!
