Deathrow Meal for Private Chef in LA **💀** “Cooking is Love Made Visible” This is a motto and a slogan that chef Ashley Cunningham lives by, but what meal will she die for?? Today she will be making Lobster Basil White Wine Pasta as her FINAL MEAL. Interestingly enough, and no offense to the Italians, pasta has a long history that began in China around 3000-4000 years ago. Ancient Chinese were skillful in making various types of noodles from wheat and water, but how did it arrive in Europe? One of the most popular theories is that either the Arabs or Marco Polo the explorer brought the idea of early pasta to Italy in the 13th century. The Italians loved and adapted the delicious dish as their own, and due to their excellence in the culinary world, people from all over the globe enjoy pasta. Recipe to chef Ashley’s Lobster Basil White Wine Pasta: 1. Finely chop shallots and slice garlic and basil. 2. Run your scissor down the lobster tail to preserve the shell. 3. Pull the meat out of the tail and do a rough chop. 4. Salt your boiling water and add pasta of your choice. 5. To build the sauce, add butter to pan and let it melt. Then add your finely chopped shallots, salt and red pepper flakes to taste. 6. When you see the shallots have started to look translucent, add your sliced garlic and cook until light brown. Add white wine to deglaze. 7. Torch the white wine for preference and throw in some bay leaves followed by the lobster tail shell we saved. 8. Let the shell infuse the sauce, and add in some fresh cracked black peppers. 9. Once the wine is “au sec” or almost dry, add your heavy cream and basil. Let the sauce reduce. 10. While the sauce is being reduced, sauté the chopped pasta with butter, salt, and black pepper. When it is lightly cooked, add the lobster and its juices to the sauce. 11. When the sauce is “nappe” or coats the back of the spoon, the consistency is ready. Add some grated parmesan cheese. 12. Add the cooked pasta to the sauce pan with some pasta water, and mix well. Add more parmesan cheese to taste. 13. Plate and enjoy!

Chef Fowles is Jamaican born Chef who learned the basics of soulful cooking as a young boy from his grandmother. As you may know, Jamaican cuisine is known for its intense flavors utilizing various spices and herbs such as pimento, scotch bonnet pepper, cerasee, and more. The ingredient we’re working with today is a KING CRAB. These enormous crustaceans live in cold water and can grow up to 24lbs and be as old as 30 years old. They also reach sexual maturity at the age of 4-5, meaning it is important that we preserve the young ones to be sustainable. King crabs are known for their buttery, sweet, and delicate meat, but what makes them so delicious is their carnivorous diet, consisting of sea stars, worms, barnacles, clams, sea urchins, fish, sand dollars, snails, and more. This diverse and nutritious diet makes their meat so much more flavorful. Another fun fact about the king crabs is that their blood contains copper, giving it a blue pigment. Chef Makes BUDGET Surf and Turf with $20 💰💸 👨‍🍳 @mrcheffito 🎥 @dannygrubs Ingredients: 1lb of chicken breast 6 pieces of shrimp 1 Onions 1 habanero Parsley Sesame oil Two cups of Rice peas and carrots Recipe: 1. Rice takes the longest. Wash 1 cup of rice the rice, then strain. Put into the rice cooker with 1:2 ratio (rice:water). Add some chicken base if you want more flavor in the rice. Cook in the rice cooker. Check after 15 mins. After it’s done cooking, put it into the freezer so it’s easier to work with. 2. Take desired amount of frozen peas and carrots 3. Small dice half an onion. Use whole if you like onions. Then sauté in pan with some olive oil, soy sauce, minced garlic, 4. Peel your shrimp and butterfly it. Put aside. 5. Slice your breast chicken in half, and marinate in whatever seasoning you have at home(jerk chicken seasoning paste). If you don’t have anything, salt pepper is fine. 6. Cut off the stem and thinly slice your habanero and put aside. 7. Wash your parsley in a large bowl to make sure there are no insects or dirt. Rough chop your parsley. 8. In a piping hot pan, grill your chicken breast. Flip after 5 mins. 9. After about 1-2 mins, slice up your chicken and put it aside to cook at the end. 10. Into a small bowl, add olive oil, peeled shrimp, lemon pepper seasoning and mix well. 11. When the rice is ready, melt a small knob of butter then add peas and carrots, minced garlic, and whatever leftover veggies you have in your fridge. When everything is toasted well, add in your frozen rice along with a drizzle of sesame oil, soy sauce(if you have some) and some parsley. 12. Into a separate pan, sauté your shrimp. When it’s almost cooked, add back your chicken breast and a drizzle of mumbo sauce. And add a handful of parsley. 13. Time to plate!

PRO CHEF SHOWS HOW TO MAKE A CHICKEN ✨FANCY✨ #chicken #chef There are levels to cooking. For us basic cooks at home, if we got a whole chicken, most likely we’d just oven roast it and call it a day. But what would a professional chef do with it? Chicken Cordon Bleu? Crispy Confit Chicken? How about a Chicken Ballontine? The name of the dish came from the French word “Ballot” which means “package”. It is a dish with a complicated and lengthy process, usually only served on special occasions. It involves a technique where the chef will debone the chicken, and creates some kind of stuffing, then wraps it into a cylindrical shape. The stuffing can be various different ingredients, including different types of vegetables, herbs, and spices. In today’s episode, chef Reid is using a highly technical method of using chicken + mushroom mousse as stuffing. So what’s the “secret” here? Attention to detail matters when it comes to executing a complex dish, but most importantly, high quality ingredients is the key. At Shilling, the process of making the Chicken Ballotine starts with a great Amish chicken. From boning the bird, leaving the skin intact, even pounding, proper technique when creating the mousse: keeping it very cold and seasoned well. And then while cooking it making sure to keep it moist and getting the skin crispy. This high level of cooking comes as a no surprise as chef Reid of Shilling Canning Company has a background in one of the finest kitchens in the world under culinary legend, Thomas Keller.
