Welcome to my Fakeaway Series, to celebrate Chinese New Year this is my all time takeaway dish. Sweet and Sour Chicken Balls (serves 4) 2 large chicken breasts cut into bite sized pieces 1 tsp. salt ½ tsp. seasoning 1 heaped tsp. cornflour Batter: 150g self-raising flour ½ tsp. bicarbonate of soda 1 tsp. salt 100ml water 100ml milk Sweet and sour sauce: 2 tbsp. Tomato Ketchup 2 tbsp. sweet chilli sauce 2 tbsp. Dark soy sauce 50ml Rice wine vinegar 50g caster Sugar 50ml Orange juice Method: 1: To make the sweet and sour sauce, combine all of the ingredients in a pan and bring up to a boil stir until all of the ingredients are incorporated. 2: Pop the chicken into a bowl, along with the seasoning and cornflour, then mix well. Make the batter by whisking together the flower, bicarbonate of soda, salt, water and milk. Dip the chicken into the batter and then straight into oil heated to 170c. Cook the chicken balls for 5-6 minutes or until the internal temperature of the chicken reaches at least 75c. drain onto some kitchen paper. Salt and Pepper Chicken (serves 4) 500g chicken thighs cut into bite size pieces 1 egg beaten 100g cornflour 1 tsp. salt 1 tsp. Chinese 5 spice 1 onion diced 5 spring onions chopped ½ tsp. chilli flakes 1 tsp. cracked black pepper 1 tsp. Chinese 5 spice 1 tsp. seasoning 1 tsp. sea salt flakes 3 red chillis sliced Method: 1: Place the diced chicken into a bowl along with some salt and a beaten egg, mix well to coat. In a separate bowl, mix the cornflower and five spice, then dredge the chicken through until fully coated. Tap off any excess then fry the chicken in oil heated to 180 C for about four minutes or until the chicken reaches an internal temperature of at least 75c. I like to do this in two batches as not to overcrowd the pan. Remove the oil and drain on some kitchen paper. 2: Stir fry the onion and the white part of the spring onion for a couple of minutes, then add the crispy chicken, spices, chilli and green spring onion. Welcome to my Fakeaway Series, this air fryer recipe was banging, you really need to try it. Korean Pork Belly Bites (serves 4) 4 thick cut pork belly slices (approx. 800g) 1 tsp. chilli flakes 1 tsp. garlic granules 1 tsp. onion granules 1 tsp. salt Korean Glaze: 2 tbsp. Gochujang (Korean red pepper Paste) 2 tbsp. dark soy sauce 2 tbsp. honey 1 tbsp. rice wine vinegar 1 heaped tsp. garlic and ginger paste 1 tsp. sesame seeds Method: 1: Cut the pork belly slices into bite sized pieces then pop on top of the crisp plate inside the air fryer drawer. Set your air fryer to 180c and cook for 25 minutes, shaking half-way through. 2: Whilst the pork belly is cooking make the glaze by mixing the gochujang, soy, honey, vinegar and garlic ginger paste. Pop the pork into a pan then pour this glaze over and toss well. Welcome to my Fakeaway Series, this is an absolute classic. @Tandoori Chicken (serves 4) 4 chicken legs with skin removed 1 tbsp. garlic and ginger paste 1 tbsp. garam masala 1 tsp. Kashmiri chilli powder 1 tsp. salt 1 tbsp. mint sauce Juice ½ lemon 1 tsp. turmeric ¼ tsp. red food colouring (optional) 100ml natural yoghurt Method: 1: Slash the chicken then marinade, in a bowl, along with rest of the ingredients. Leave to stand for a couple of hours if you have time. Place on top of the crisp plate inside of your air fryer drawer then cook at 180c for 35 minutes. Heres my take on this viral potato recipe. Smashed Potato Salad (serves 4) 600g maris piper potatoes peeled and quartered ½ tsp. dried chilli flakes 1 tsp. ground cumin 1 tsp. turmeric 1 tsp. onion granules 1 tsp. garlic granules 1 tsp. salt 1 tsp. mustard seeds 3 tbsp. mayonnaise 1 tsp. wholegrain mustard ½ cucumber deseeded and diced ½ red onion diced 2 tbsp. flatleaf parsley 2 tbsp. fresh dill 1 tbsp. green chilli chopped 80g feta cheese crumbled Method: 1: Par boil the potatoes for eight minutes, then drain and leave to steam for five minutes. Pop the potatoes into a bowl, then sprinkle in the spices, Mix well then add into a baking tray along with some hot oil. Pop into an oven pre-heated to 200c / 180c fan, scatter the potatoes into the tray, then turn to coat generously in the oil. Cook in the oven for 30 minutes turning occasionally, crush with a glass then return to the oven for another 30 minutes, until crisp. 2: In a separate bowl, combine the mayonnaise, mustard, cucumber, onion, herbs and chilli, then gently fold the crispy potatoes through. Welcome to my Fakeaway Series. This is hands down the most requested recipe so far. Doner Kebab (serves 4) 800g lamb mince 1 tbsp. dried oregano 1 tbsp. garlic granules 1 tbsp. onion granules 1 heaped tsp. paprika 1 tbsp. cumin 1 tsp. pul biber or chilli flakes to taste 1 tbsp. salt Method: 1: Place the lamb mince into a bowl along with the herbs and spices, mix well then shape into a log which fits inside of your air fryer drawer, wrap tightly in foil. Leave to marinade, overnight is best but even an hour will do wonders for the flavour. When ready to cook, place inside your air fryer drawer and cook for 40 minutes set at 160c. Carefully remove from the foil, then pop on top of the crisp plate and return uncovered to the air fryer drawer. Increase the heat to 200c and cook for further 10 minutes, turning half-way through. Make sure the meat reaches an internal temperature of at least 75c. Leave to rest for 10 minutes before carving. Welcome to my Fakeaway Series, this has literally been the most requested recipe so far. I hope you enjoy. Chicken Chow Mein (serves 2) 2 nests of egg noodles 1 chicken thigh sliced ½ onion sliced 1 clove garlic chopped 1 tbsp. light soy sauce 1 tbsp. dark soy sauce handful beansprouts 1 Tsp. sugar 1 tsp. sesame oil 3 spring onions Method: 1: Boil the egg nests for four minutes then drain and plunge into cold water. Once cool. Pop back into a bowl at a tiny bit of oil then mix so the noodles are coated. This will stop them sticking together in the wok. 2: Heat a large frying pan or wok, then add a splash of oil. Pop in the chicken and cooking until golden, this will take around three minutes. Add in the onion and garlic and toss for a minute, then the noodles, dark and light soy, then add in the bean sprouts and mix well. Finally, add a small amount of sugar to taste, some sesame oil and lastly some spring onions. Welcome to my Fakeaway Series, comment, if you’ve never tried one of these burgers before. Fillet O Fish (serves 4) Tartar Sauce: 6 tbsp. Mayonnaise 6 small Gerkins very finely chopped 1 tbsp. Fresh parsley chopped 1 tbsp. fresh dill chopped 1 tbsp. white onion very finely chopped Squeeze lemon juice 500g skinless cod fillet 50g plain flour 1 egg beaten 100g breadcrumbs 4 brioche burger buns toasted 8 slices of processed cheese Method: 1: Make the tartar sauce, by combining the mayonnaise, gherkins, herbs and onion along with a squeeze of lemon juice, and a pinch of salt and pepper. 2: Pat the fish fillets dry, then coat them in the flour, then egg, and finally the breadcrumbs until fully coated. Shallow fry in oil, heated to 180c for around 6 minutes until Golden and cooked through. 3: Assemble the burger by spreading some of the tartar sauce onto the bottom of the bun, add a slice of cheese, the Fillet o Fish, more cheese, sauce and top with the other half of the bun. #fakeaway #mcdonalds #mcdonaldshacks #filletofish #burgertok #burgerking

Seeing as you loved my last Potato recipe so much, here’s my favourite, make sure to give it a try Patatas Bravas (serves 4) 80g chorizo small dice 1 small onion chopped 1 tbsp. garlic paste 1 tbsp. tomato puree ½ tsp. chilli powder 1 tsp. smoked paprika 1 tsp. dried thyme 1 x 400g tin chopped tomatoes 700g Maris piper potatoes peeled and quartered 1 tsp. smoked paprika 1 tsp. salt 1 tsp. dried thyme 1 tsp. onion powder 1 tsp. garlic powder 2 tbsp. fresh parsley chopped Garlic aioli to serve Method: 1: Fry the chorizo, onion, garlic and salt along with a splash of oil for three minutes, then add in the tomato purée, chilli powder, Paprika, thyme. Cook for a couple more minutes, then pour in the chopped tomatoes and simmer for 10 minutes. I like to use a potato masher to get rid of any lumps in the sauce. 2: Par-boil the potatoes in boiling salted water for 8 minutes then drain, leave to steam in the colander for 5 minutes. Pop into a bowl, then scatter in the Paprika, salt, thyme and the garlic and onion powder, gently toss to coat. 3: Pour a generous amount of oil into a baking tray and pop into an oven pre-heated to 200c / 180c fan and heat for 15 minutes, scatter the potatoes into the hot oil then turn to coat generously in the oil. Big Mac (serves 2) Big Mac Sauce: 4 tbsp. mayonnaise 1 heaped tbsp. gherkins very finely chopped 1 tsp. yellow mustard 1 tsp. garlic granules 1 tsp. onion Powder 1 tsp. paprika 1 tbsp. onion very finely chopped 1 tbsp. pickle juice from the gherkin jar 500g beef mince 2 tbsp. onion very finely chopped Lettuce shredded 4 slices processed cheese 3 brioche rolls toasted Method: 1: Make the Big Mac sauce by combining all of the ingredients in a bowl along with a pinch of salt baby then leave the stand for 10 minutes. 2: Divide the minced beef into four equal sized portions, then roll into balls. Pop into a hot pan then smash down until flat. Welcome to my Fakeaway Series, if you are lucky enough to travel to Ireland then you need to try this takeaway favourite. Spice Bag (serves 2) 400g shop bought frozen chips 200g frozen popcorn chicken nuggets ½ red pepper diced ½ green pepper deseeded and diced ½ onion diced 1 tsp. paprika 1 tsp. Chinese 5 spice ½ tsp. garlic powder ½ tsp. chilli powder to taste 1 tsp. salt Method: 1: Set your air fryer to 180c. Scatter the frozen chips into the drawer then cook for 12 minutes, shaking a couple of times throughout the cook. Add in the popcorn chicken and cook for further 10 minutes until golden. 2: Meanwhile, add a splash of oil into a hot wok or pan, then stir fry the peppers and onions for 2 to 3 minutes. Add in the chips and popcorn chicken, then scatter over the spices and cook for further minute, season well with salt. Welcome to my Fakeaway Series. If you are from the UK, then you will know the only way you can get your hands on a McRib is to make it yourself and I’m here to show you exactly how to do it. Tag someone who misses the McRib. McRib Sandwich (serves 2) 400g good quality pork mince ½ tsp. salt 1 tbsp. BBQ seasoning 1 tsp. garlic granules 1 tsp. onion granules ½ tsp. black pepper BBQ sauce 2 sub rolls toasted White onion sliced Gherkins (optional as I hate them) Method: 1: Place your pork mince into a bowl then add in the salt, BBQ seasoning, garlic, granules, onion granules and black pepper. Mix well, then shape into two rectangular patties measuring approximately 6” x 3” if you wet your hands, this will make the job easier, then use your finger to make four indents within the meat, this will replicate the original shop bought version. 2: Place the patties into your air fryer and cook at 190c for 15 minutes or the internal temp reaches at least 75c. Halfway through brush with BBQ sauce. 3: Spread some BBQ sauce onto the base of a toasted sub roll, place the rib patty on top, then add some onions and gherkins before topping with the bun lid.

Crispy Honey Garlic Chicken (serves 4) 500g chicken thighs cut into bite size pieces Marinade Ingredients 1 tbsp. garlic and ginger paste 1 tbsp. cornflour 1 tbsp. black pepper 1 tbsp. soy sauce 1 tbsp. shao Xing Rice Wine 3 tbsp. cornflour 4 cloves garlic sliced 3 tbsp. honey Juice and zest ½ lemon 1 tsp. salt Spring onions for serving Sesame seeds for serving Method: 1: Place the diced chicken into a bowl along with the garlic and ginger paste, soy, shao Xing Rice Wine, cornflour and pepper then mix well to coat. In a separate bowl add the second amount of cornflower then dredge the marinaded chicken through until fully coated. Tap off any excess then fry the chicken in oil heated to 180 C for about four minutes or until the chicken reaches an internal temperature of at least 75c. I like to do this in two batches as not to overcrowd the pan. Remove the oil and drain on some kitchen paper. 2: Heat a wok or frying pan along with a splash of oil, then fry the garlic for 30 seconds. Pour in the honey, lemon juice and zest along with some salt then adding the crispy chicken and toss well to coat. KFC Zinger Tower Burger (serves 2) Hashbrown: 1 large king Edward Potato grated approx. 350g 1 heaped tbsp. corn flour ½ tsp. garlic powder ½ tsp. onion powder 2 boneless and skinless chicken thighs Marinade: 100g Greek yoghurt 1 tsp. paprika 1 tsp. garlic granules 1 tsp. chilli powder 1 egg beaten KFC Crispy Coating: 100g plain flour 1 tsp. black pepper 1 tsp. paprika 1 tsp. chilli powder 1 tsp. garlic granules 1 tsp. onion granules 1 tsp. salt 1 tbsp. dried thyme 1 tbsp. dried oregano Supercharger Sauce: 4 tbsp. mayonnaise 2 tbsp. tomato ketchup 1 tsp. chipotle sauce 1 tbsp. Worcestershire sauce ½ tsp. garlic powder ½ tsp. onion powder 2 brioche buns toasted 4 slices processed cheese Shredded lettuce Method: 1: Grate the potato then wash in cold water, squeeze out any excess liquid then pop into a pan along with a splash of oil, then cook over low heat for 10 minutes. Leave to cool, then combine in a bowl, along with the cornflour, garlic powder, onion powder and some salt. Shape into rounds then freeze for 40 minutes. Fry in oil heated to 170c for 6-7 minutes or until crisp and golden. 2: Make the supercharger sauce by combining all of the ingredients in a bowl. 3: Place the chicken into a bowl along with the yoghurt, paprika, garlic granules, chilli powder and the egg, add a good pinch of salt then pop into the fridge for at least 2 hours. For the KFC Crispy Coating, combine the flour with the herbs and spices then dredge the chicken through, giving them a good coating. Fry the chicken at 170c for 5-6 minutes or until cooked through. Make sure the internal temperature reaches at least 75c. 4: Spread some Supercharger sauce onto the base of a toasted bun, and then add cheese, shredded lettuce, the crispy chicken, a slice of cheese, hashbrown then finally a bit more sauce before topping with the bun lid. #kfc #fakeaway #zingerburger #friedchick#friedchickenkensandwich #kentuckyfriedchicken #zingertowerburger

Welcome to my Fakeaway Series, this recipe was requested so many times. Of course you can use fermented black beans from your local Asian supermarket. However, the paste is great too. Beef in Black Bean Sauce (serves 4) 300g thick cut rump steak sliced thinly 1 tsp. corn flour ½ tsp. bicarbonate of soda 1 tbsp. soy sauce 1 onion diced 1 red pepper diced 1 green pepper diced 100g sugar snap peas halved 1 tbsp. garlic and ginger paste 2 tbsp. black bean paste 3 tbsp. oyster sauce 1 tbsp. soy sauce 30ml Shao Xing rice wine 1 tbsp. sugar Method: 1: Pop the beef into a bowl along with the corn flour, bicarbonate and soy then mix well, leave to stand for 20 minutes. Stir fry the beef in very hot oil for 1-2 minutes then remove from the pan. In the same pan fry the onion, peppers and sugar snaps for 2-3 minutes. Add in the garlic and ginger, black bean paste, oyster sauce, soy sauce, shao Xing rice wine and the reserved beef, toss well and cook for a couple of minutes then add sugar to taste. Welcome to my fakeaway series. Whats your favourite flavour wing? Sticky Hoisin Chicken Wings (serves 2) 8 chicken wings split into drums and flats 1 tsp. salt 1 tsp. Shaoxing wine 1 tbsp. dark soy sauce 3 tbsp. corn flour 1 tsp. Chinese 5 spice 1 tbsp. garlic and ginger paste 2 tbsp. sweet chilli sauce 1 tbsp. rice vinegar 1 tbsp. dark soy sauce 1 tbsp. hoisin sauce Mayo for serving Fresh chives for serving Fresh red chilli for serving Method: 1: Pop the chicken wings into a bowl, along with the Shaoxing wine and soy, leave to marinade for 20 minutes. Combine the cornflour with the 5 spice then add the wings, give it a good toss until the wings are completely coated. Place onto the crisp plate within your air, fryer drawer, spray with oil and cook at 200°c for 16 minutes shaking halfway through. 2: Meanwhile for the ginger and garlic in a splash of oil for 2 to 3 minutes, then add in the sweet, chilli sauce, vinegar, soy and hoisin. Bring up to a simmer, then toss the wings through the sauce until fully glazed.
