I love smoking a chuck roast low and slow. It’s economical, versatile and in my opinion, a very underrated cut of beef for bbq. For my burnt ends, I used some W sauce for the binder and seasoned heavily with my AP rub. It went on the @webergrills kettle with the new @kingsford low and slow briquettes, set for around 250 degrees for about 3-4 hours. While those were on, I prepped the sweet and spicy bbq sauce. Next, cube up the chuck roast and toss it in a foil pan with the sauce. Cover with foil and back on the grill for another hour or so, until they are fork tender. Remove the foil during the last 30 minutes to allow the sauce to thicken up. And that’s it! If you like onions, this one is for you 😂 The viral flying Dutchman burger. Instead of buns, use thick cut onion slices. I used 4oz ground beef patties, smashed and seasoned with my AP rub. Had to go with American cheese on top. For the burger sauce, it’s ketchup, mayo, sweet relish, and a splash apple cider vinegar. Smash burgers are my favorite type of burger, so I liked these a lot, but they are super messy. The onions start to fall apart and it’s hard to keep everything together. Easy shredded beef sandwiches. If you’re not making these with a chuck roast, you’re missing out. It’s a great alternative to more expensive cuts and they come out delicious! Cut the chuck roast into larger cubes, some W sauce for the binder and season with my AP and Steak seasoning. These go on the @Weber Grills kettle running at 250 degrees with @Kingsford Low & Slow Briquettes. Smoke for about 2-3 hours then place them in a foil pan with butter, bbq sauce and more AP Rub. Cover with foil and continue cooking until fork tender. Total cook time was about 4 hours. Shred the beef and assemble the sandwiches. Pork steaks should get more love than they do lol. It’s like your own mini pork shoulder. Hit it with that @bearandburtons W sauce and season them with my AP Rub. These go on the @webergrills kettle setup for indirect cooking with @kingsford at cruising at around 250 degrees. 3 hours later put them in a foil pan, add your favorite bbq sauce, cover and cook until probe tender. Better late than never I guess 😂 had to try the viral chopped sandwich and I went with chicken bacon ranch. I cooked the bacon, chicken thighs and chopped them up with lettuce, tomatoes, red onions and ranch. Piled it into a roll and the sandwich was ready. Sometimes these viral food trends are questionable 😂 but this one was really good. My favorite way of cooking a lobster tail. Start by splitting the shell and laying the meat on the top. You can take it out fully, but this makes for a much nicer presentation. I seasoned it with my steak seasoning and cooked it on the @biggreenegg at 350 degrees, indirect, until it hit 135-140 internal. I also had some compound butter leftover from the tomahawk cook, so that got melted down and poured over the lobster tail at the end. Finish it off with some lemon juice and it’s ready to go. Probably the world’s easiest bbq chicken sandwich 😂 . Start by cutting your chicken thighs into bite size pieces and toss them with red onions, olive oil and sweet bbq seasoning. I’m using my new @webergrills Slate griddle set for high heat for about 10 minutes. Towards the end, add your favorite bbq sauce, sriracha, and some cheese. Let’s talk beef back ribs. It’s another less common cut of meat but so easy to make and comes out delicious. I seasoned mine with my AP and Steak seasonings and they hit the @webergrills kettle with @kingsford Low & Slow briquettes cruising at 250 degrees. Spritz them with apple cider vinegar every hour and pull them off when they hit 200 internal. Total cook time was about 5 hours. I wrapped them in foil and let them rest for an hour before slicing. Finally trying the “old” viral sausage popper boats lol . So glad I did! They were delicious! I used @johnsonville mild Italian sausages. Cut them down the middle and shape into a boat. For my filling I used cream cheese, @carusoprovisions mild giardiniera, shredded cheese and my new maple bourbon seasoning. Stuff the boats, more cheese and seasoning on top, and they hit the @biggreenegg at 300 degrees, set for indirect heat for about 25 minutes or so. My favorite meat snacks are garlic steak bites. You can use any cut of beef. I found these tenderloin trimmings for a few bucks and they were perfect! Nice and tender and cheaper than buying a whole fillet. Cube them up, toss in some W sauce, season with my Steak seasoning and they hit the @Weber Grills griddle over high heat. Once you have a nice sear on the outside, drop the heat, add fresh garlic and butter, and cook until the butter is melted. Pull them off, top with some fresh parsley and enjoy! Here are my tips for making easy pastrami at home. 1. Use a corned beef brisket flat and soak it in water overnight. This will remove the extra salt. If you skip the soak, your pastrami will be way too salty. 2. When crushing your whole spices, don’t smash them too much. This will help add some texture and extra flavor to your finished product. 3. Smoke at 250 degrees for about 3 hours and then place it in a foil pan on a wire rack with HOT beef broth. This will steam the brisket and get it super tender. 4. Pull it off the grill when it’s probe tender, around 200-205 degrees interna and REST for an hour. 5. Slice and enjoy! My homemade spice mix: - 1 tbsp whole peppercorns (lightly crushed) - 1 tbsp whole coriander seeds (lightly crushed) - ½ tbsp mustard seeds (lightly crushed) - 1 tbsp ground black pepper - 1 tbsp coriander powder - 1 tbsp brown sugar - 1 tbsp parprika - 1 tsp garlic powder - 1 tsp onion powder - NO SALT #grillinwithdad #pastrami #bbq #EasyRecipe #cookingtips #brisket #easyrecipe #tasty

If you never had venison, this is the perfect recipe to try. Grilled rack of venison with a delicious blueberry sauce. It’s savory, a little sweet, tangy and delicious! I used a little Dijon mustard for my binder and seasoned the venison with my AP rub. It hit the @webergrills kettle over indirect heat to start. For the sauce: ¼ cup diced onion 3 tbsp olive oil 2 cups blueberries ¼ cup sugar ¼ cup brown sugar 1 tbsp chopped rosemary Zest from 1 lemon Juice from 1 lemon ½ cup water Bring that up to a simmer and cook until blueberries pop and sauce thickens up. Here’s how I like to prep and grill ribeye caps. Untie them, roll them out and remove any silver skin that’s inside. I like to season the inside as well before rolling them back up. Tie together with butchers twine and these are ready to hit the grill. Quick sear first and then finish indirect until they hit 120 internal. Grilled steaks with homemade fries. I really don’t need much more than that 😂 For the fries, cut up your potatoes and soak them in cold water for an hour or so. Remove them from the water and pat them dry. I cooked these in bacon fat from @baconupbacongrease in a cast iron skillet on my @webergrills kettle. Preheat it to 350 degrees, drop in the potatoes and fry them until they are golden brown. Took about 10-13 minutes. Remove from the skillet, drain and immediately hit them with salt, parsley and some freshly grated parm. For the steaks, I had a couple of choice NY Strips. Season with my Steak seasoning and they hit the grill over direct heat.
